Fun Size Review: Reese’s Ice Cream Cake!

I made this cake for Little Boy #1s birthday party a couple of weeks ago, and I had to share it with you because it was so very GOOD and EASY to put together. He always requests an ice cream cake, and while the cakes from our favorite ice cream shop are good, they can be a little pricey! Homemade is the way to go here.

Ive made ice cream cakes before, but what I love about this one is that you make it in a springform pan. This makes it foolproof. Your cake turns out round and even every time. This cake has a layer of fudge and chopped peanut butter cups inside that I didnt take a picture of. Because I didnt want to serve an ice cream cake with a piece cut out. Youll have to just trust me theyre in there.

I also love the versatility here. You could really use any kind of crushed cookie, any flavor of ice cream, and top it with your favorite kind of chopped up chocolatey candy.

My best tip for making this ice cream cake nice and smooth is to use a metal spatula dipped in hot water over the outside of the cake. This will slightly melt that outside layer of ice cream and smooths out any bumps or uneven spots.

How To Make Ice Cream Cake

This ice cream cake recipe comes together in less than 10 minutes. The hardest part about this Reese’s ice cream cake is that you have to wait for it to all freeze together before you can dig in.

  • Place 5 full ice cream sandwiches on the bottom of an 8×8 baking dish. Cut other ones to fin in the gaps.
  • Spread half of the jar of hot fudge over the top of the ice cream sandwiches in the pan.
  • Spread half the container of thawed Cool Whip on top and sprinkle with chopped candy bars.
  • Repeat the layers again with the remaining ingredients.
  • Cover and place in the freezer for a few hours, so everything can freeze back together.
  • Before serving, drizzle the cake with chocolate syrup and sprinkle with mini Reese’s pieces.
  • How To Make A Homemade Ice Cream Cake

    Ice cream cakes need to be made in advance so they have a chance to freeze completely. Otherwise, youll have a melted mess on your hands.

    You do have to think ahead of time because you will need to freeze each individual layer for the best results. Here is what I do:

    Day 1:

    • Make peanut butter crust and press into springform pan. Pop in freezer for 30 minutes.
    • Spread on layer of hot fudge topping and top with Reeses. Freeze for 1 hour.
    • Spread slightly softened ice cream on top of hot fudge/Reeses layer, and freeze for AT LEAST 1 hour. You want it to be pretty firm.
    • Spread slightly softened second flavor of ice cream on top of first layer. Cover and freeze for AT LEAST 6 hours, preferably overnight.

    Day 2 :

    • Remove ice cream cake from freezer. Drizzle hot fudge topping over the top of the cake.
    • Prepare whipped cream. Pipe onto the top of the cake and top with Reeses minis. Serve immediately!

    How To Make The Chocolate Ganache Topping

    • Heat the cream: In a microwave-safe measuring cup, heat the cream until bubbling.
    • Melt the chocolate: Place the chocolate chips into a heat-proof bowl, then pour the hot cream over top. Whisk until melted and smooth, then cool for a few minutes.
    • Add to the cake: Pour the ganache over the cake and allow it to drizzle down the sides.
    • Garnish and freeze again: Top the cake off with chopped peanut butter cups, then freeze until youre ready to serve.

    How To Make Reeses Ice Cream Cake

    This Reeses ice cream cake is simple enough to make youll wonder why you ever used store-bought. While its doing its thing in the freezer, you have plenty of time to kick back and relax.

    Prep Your Materials: Line the bottom and sides of a 9-inch springform pan with plastic wrap. Place a large glass or metal bowl in the freezer.

    Make the Ice Cream Base: Whip the heavy cream to soft peaks in the bowl from the freezer using a stand mixer or the whisk attachment on a hand mixer. Whisk together the sweetened condensed milk, vanilla, and peanut butter in another bowl until they smooth out.

    Fold In the Fillings and Freeze: Fold the sweetened condensed milk mixture into the whipped cream, then fold in dollops of peanut butter and the chopped Reeses. Spread it into the prepared pan, leveling it with an offset spatula, and pop it in the freezer. Put the bowl you used for the whipped cream back in the freezer.

    Make the Chocolate Ganache: Place the chocolate chips and heavy cream in a microwave-safe bowl, and microwave it for 1 minute. You could also heat the cream in a small saucepan on the stove and pour it over the chocolate chips. Either way, whisk the chocolate into the cream until the ganache is smooth and cool it to room temperature.

    Add the Ganache: Spread the ganache over the top of the cake in a smooth layer using an offset spatula, then return it to the freezer.

    Serve: Once its completely set, slice up your ice cream cake and serve it.

    How To Make No

    • Make the whip cream: Chill the mixing bowl in the freezer for 5-10 minutes, then pour in the heavy whipping cream. Beat until bubbly, then slowly add in the powdered sugar. Beat until peaks form.
    • Combine: In a bowl, cream together the cream cheese and sugar until smooth. Add the milk and vanilla, then mix in the peanut butter. Fold 1/3 of the whipped cream in at a time and mix until smooth, then gently stir in the chopped peanut butter cups.

    You honestly can’t go wrong with whatever candy you use. Think of all the combos you could do! Caramel sauce with Snickers bars. Marshmallow topping and Three Musketeers….the possibilities are endless.

    You can either do this with a springform pan or with the same pan, you baked the cake in. I prefer the springform pan, so I can more easily remove the cake. If you like to use cake collars, this is also a great way to get those nice smooth edges.

    • Prep the pan: Wrap the sides of the pan with saran wrap so it hangs over the edge of the pan. Place an 8-inch cake board into the bottom of an 8-inch cake pan or springform pan.
    • Level the cake: Use a large serrated knife to remove the dome from the top of the cake. You want the top to be nice and flat. Set the cake into the bottom of the pan.
    • Layer the ice cream cake: Spread the ice cream over the top of the cake.
    • Freeze: Loosely cover the cake with plastic wrap, then freeze it until firm. This should take anywhere from 4-6 hours.
    • Prep for serving: Once frozen, take the cake out of the freezer and remove it from the pan. Set onto a serving plate or cake circle, then use a warm offset spatula to smooth the sides.

    How To Make An Ice Cream Cake Without Cake

    This cake is a great example of a cake-less ice cream cake. If you want to add a cake layer to this recipe, bake it in the same size pan as your springform pan is, in this case, 9 inches, Add it in place of one of the ice cream layers or use only have of the ice cream called for and place the cake between the ice cream layers.

    Whatever you want! Ice cream cake can be made with layers of ice cream and toppings, OR it can have a layer of cake in it as well.This particular recipe does not have cake in it but you can easily add a layer of cake. Heres how:

  • bake the cake in a 9 inch cake pan
  • substitute the cake for one of the ice cream layers OR
  • use only have of the ice cream called for in each layer and place the cake between the ice cream layers.
