I use strawberry fudge stripe cookies, frozen pound cake, with strawberry topping and whipped cream for this bright and eye-catching sweet treat.

    Although it does present as a fancy look dish this recipe is surprisingly simple and something that would be very easy for the kids to pitch in and help with. The simple ingredient list also helps to make it a pretty affordable dessert recipe in itself.

    How To Make Strawberry Shortcake Icebox Cake

    Combine the strawberries and sugar: To get started, youll chop up your strawberries and combine them with a little sugar. Let them sit a bit while you making the cream filling.

    Make the creamy filling: The filling is a combination of cream cheese, sugar and whipped cream. The whipped cream is folded into the cream cheese mixture and then the strawberries are added. Super quick and simple!

    Assemble the icebox cake: Layer the ladyfinger cookies, cream filling and strawberries. You will have two layers of cookies, strawberries and filling. Start with a layer of ladyfingers.

    Chill: Once everything is layered together, refrigerate it until the filling firms up. This will take 4-5 hours.

    Make the crumb topping: The topping can be added at any point when the cake is chilling, or just before serving. Its a little graham cracker crumble that adds a bit of crunch to the top.

    Just combine some graham cracker crumbs, sugar, a touch of salt and melted butter. I like to toast it in the oven a bit so that it crisps up and stays crispier while on the cake, but you could skip the baking step if you wanted to. In lieu of the topping, you could also just cover the top of the cake with more strawberries. Totally up to you!

    The foundation of this dessert is a nice cookie crust. To make the crust, crumble about 24 Golden Oreos. You can use a food processor to get nice fine crumbs or break out the rolling pin and zip-top bag. You can also use graham crackers, shortbread cookies or vanilla wafers here if you prefer.

    When youve got nice crumbssomewhere between a powder and coarse crumblesyou can stir them together with your melted butter. Press into an 8×8 pan lined with parchment. Pop this into a 350ºF oven for about 20 minutes. Once baked, let it come to room temperature.

    This ice cream cake is totally addicting! Its inspired both by this Strawberry Ice Cream Crunchie Cake and these Strawberry Shortcake Ice Cream Bars. I grew up LOVING those ice cream bars and those little crunchy pieces on the outside were definitely the best part. I knew I had to incorporate them into this ice cream cake.

    One other thing I had wanted to incorporate was a strawberry fudge layer, similar to the chocolate fudge layer in my Copycat Dairy Queen Ice Cream Cake. Im a big fan of that fudge layer and really wanted a non-chocolate variation. Unfortunately, white chocolate is much more finicky. When I had the fudge layer at the right consistency, it never really froze completely and would slowly leak out of the sides of the cake. When I got it so that it wouldnt leak, it was just too chewy and firm. Sadly, I had to abandon it.

    This ice cream cake is still awesome even without that! Of course youll want to use your favorite brand of ice cream, but when combined with the strawberry shortcake crunchies, its a fun and delicious ice cream cake!

    Homemade Ice Cream Ingredients

    If youre using store-bought ice cream, skip the ingredients for making homemade ice cream and instead use:

    • 1.5 quart strawberry ice cream
    • 1.5 quart vanilla ice cream

    Alternatively, you can mix up the kind of ice cream you use and really have fun with the flavors of this ice cream cake. Strawberry cheesecake ice cream, strawberry swirl ice cream, or strawberry shortcake ice cream are perfect choices. Mix-and-match flavors to find your favorite combo!

    Layering The Ice Cream

  • Pull the pan with the crust out of the freezer and cover the crust with ½ of your strawberry ice cream. If using store-bought ice cream, use ½ of a 1.5 quart container. Use a spatula to press it flat and even, then return it to the freezer for 30 minutes.
  • Remove the pan from the freezer and cover the first layer of ice cream with a layer of ¾ of your vanilla ice cream. If using store-bought ice cream, use ¾ of a 1.5 quart container. Spread it evenly over the top.
  • Return the pan to the freezer to solidify for another 30 minutes.
  • Finally, remove the pan from the freezer and cover the vanilla ice cream layer with the remaining strawberry ice cream. Return to the freezer for another 30 minutes.

      One 1L tub of Cool Whip Original Frozen Whipped Topping will do for this entire recipe. Not only is whipped cream in the layers, but its a nice decoration for the top of the cake.

      I always say life is better when theres whipped cream. So, dont be shy to do what I did and use the tub for the layers and the spray can of whipped topping for the decorative finish.

      Assembling The Shortcake Ice Cream Cake

    • Once the 30 minutes have passed and the ice cream cake feels solid, take it out of the freezer. Remove it from the pan and remove the plastic wrap.
    • Spread the remaining vanilla ice cream along the outside of the cake. This is easiest to do with an offset spatula. Make the edges as even as possible.
    • Place the cake over a sheet pan to catch any toppings that may fall, and then use your clean, dry hands to place the crushed freeze-dried strawberries and cookies on the outside of the cake.
    • Add the cake back to the freezer until ready to enjoy!

    • Combine the strawberries, sugar, and water in a medium saucepan.
