This dreamy carrot cake has that moist, carroty, nutty flavor we ALL love but it also boasts a ton of healthy ingredients. I knew I could make a healthier cake version that provided not only satisfaction but actually nutrients. So instead of conventional sugar I used maple syrup / crystals and stevia extract.

As a butter substitute I used avocado, fat provides moisture in the cake.

Instead of regular milk I made some almond milk the day before.

I wish I could use flax seeds only, but I would not recommend trying to make this cake egg free.

I didnt want the coconut flavor to come out in this cake and I didnt want too much cashews either so I just mixed them .

And in order to enhance the flavor I incorporated some vanilla and decaf espresso powder .

All these combination brought up the mocha name in this cake, which is what you usually ask for an espresso combined with steamed milk and chocolate.

How To Make This Recipe

Preheat the oven to 350 degrees Fahrenheit. Line two round 8 inch cake pans with parchment paper and set aside. See notes about using 9 inch pans.

Combine the room temperature milk with the vinegar and mix together in a glass. Set aside.

In a large mixing bowl , sift together the almond flour, all purpose flour and cocoa powder. Whisk in the remaining dry ingredients.

The espresso powder is optional, but it really enhances the chocolate flavor. I promise it wont taste like coffee at all!

Add in all remaining wet ingredients and whisk together until smooth. Add the batter to the prepared cake pans, trying to keep them as even as possible to ensure even baking. Let sit for 5 minutes.

This isnt something you usually do with cake batter, but I always do it when baking a vegan gluten free cake. It allows the batter to rest for a second and absorbs some excess moisture so the cake isnt too dense.

Add to the oven and bake for 34-42 minutes or until an inserted toothpick comes out with a few crumbs.

You dont want to underbake since the cake will sink in the middle or end up dense, but over-baking will lead to a dry cake, so start your timer at 34 minutes, and add just a couple of minutes at a time until the toothpick has a few crumbs but isnt wet.

Remove from the oven and let cool in the cake pans for 30 minutes.

Carefully flip onto a cooling rack and let cool completely before frosting. I usually stick them in the fridge to cool, which takes about 90 minutes.

When I first began my low carb journey I wasnt sure I would ever eat baked goods again, let alone sugar free cakes. That changed the moment I saw the beautiful cover photo of Elana Amsterdams cookbook, The Almond Flour Cookbook, which featured a chocolate almond flour cake. I knew then, that enjoying the occasional low carb keto treat would be possible.

This is the first time I have shared a gluten-free low carb birthday cake recipe that was vanilla, although I do have a nice recipe for vanilla cupcakes.
