If youve never had homemade carrot cake, meaning not from a box or pre-made, then get ready to have your mind blown. Youll be making carrot cake from scratch every year from here on out.

It starts, very obviously, with the carrots. Do not buy the bags of pre-shredded carrots as those arent grated finely enough. Also make sure to buy organic carrots. I find they have much better flavor and texture than regular.

Start by rinsing and pealing your large carrots . Using a box grater, grate using the second largest holes. Youre wanting it to grate like a fine shredded cheese.

It takes about 5-6 large carrots to get the amount you need. Once you fill up 2 1/2 cups worth, set it aside.

  • Preheat the oven to 350 degrees and grease and flour three 9-inch cake pans. Get out two mixing bowls, one medium and one large.
  • In the medium-sized bowlwhisk together the dry ingredients .
  • Now in the large bowl and cream together the vegetable oil, applesauce, vanilla extract, sugar, and the brown sugar.
  • Add the eggs to the wet mixture, one at a time. Then stir in the shredded carrots.
  • Now add the dry ingredients into wet ingredients until there are no more streaks of flour in the batter . Divide the batter evenly among the prepared cake pans.
  • Put the pans in the oven for about 35 minutes. Because baking time can vary depending on your oven and altitude, it is best to test the doneness of your cake by inserting a toothpick into the center of the cake. If it comes out clean , your cake is done BUT if any wet, sticky batter is stuck to the toothpick, your cake needs more time to bake. Keep it in the oven for a few more minutes and try again.
  • Carefully turn the cakes out onto cooling racks and allow to cool.

    I hate to say this, but this cake was a major disappointment. Sure, the cinnamon was pleasant, and the crystalized ginger added a nice unexpected pop of heat. But the cake was sticky and slightly marshy as if it had been soaked in simple syrup.

    But the main issue I had with this recipe was the frosting. It was way too loose and hard to work with, making the presentation of the cake look sloppy and unfinished. No matter how much I tried to chill it, it kept melting off of the cake when I tried to assemble it. It could have been the brand of mascarpone cheese I used , but it just didnt work. As much as I love Ina and her recipes, this just didnt do it for me.

    If your frosting is runny, it could mean that your cream cheese has melted a bit. Try putting it back in the refrigerator for about 30 minutes to reset. You can also add more confectioners sugar to bring it back to the right consistency. Keep in mind that adding more sugar will make your icing sweeter, so be sure to taste as you go!
