Tips For The Best Pineapple Upside Down Cake

Make sure you are using a good quality springform pan that you know is reliable. From time to time, people write to me saying their springform pan leaked, butter went all over, and they get upset with me. This is not my fault, peeps. Its your pan that leaked. The solution?

Test your pan with water in it. Does it leak? If so, it will probably leak with the melted butter in it. Dont make this pineapple upside down cake from scratch until you have a pan you trust, simple as that.

This is the 9-inch springform pan I currently use and I have never had it leak with this cake. I have, however, had it leak when I quickly put it together and sealed the latch carelessly. I do recommend it and its been a workhorse with other cakes over the years. I bought it in 2015 and it still looks and works as good as new.

Note that you should wind up with just enough cake batter to fill the 9-inch springform pan 3/4 full. If you somehow wind up with a little extra batter, its better to discard it than overfill the cake pan.

Pineapple Upside Down Mini Cakes

tip: Do NOT use a pan with removable bottomsthey will leaktrust me! LOL

  • 4 Tablespoons pineapple juice from the canned pineapples
  • cup flour
  • 2 Tablespoons pineapple juice from the canned pineapple rings
  • ¼ cup butter
  • cup light brown sugar
  • 1 can pineapple rings
  • 12 maraschino cherries
  • Grease a muffin tin or a 12 cup mini loaf tin.
  • In a small pot, heat the butter & brown sugar until melted.
  • Add 2T. juice and cook 1 minute.
  • Divide this glaze into the muffin tin and top each one with a pineapple ring. Add a cherry
  • Mix the cake ingredients well and divide into the pan.
  • Bake 15-20 minutes.
  • Cool 12 mins and carefully remove!

    How To Make Pineapple Upside Down Cake

    Nordic Ware Pineapple Upside Down Cakelet Pan

    I used one 20-ounce can pineapple slices. I kept one slice whole for the center of the cake, and then fanned 12 halves around it. My pet peeve about most pineapple upside-down cakes is that theres not enough pineapple if you keep the rings whole and intact. The focus of a pineapple upside-down cake should be on the pineapple, so I tried to maximize the pineapple coverage on top by using a fanning technique.

    I used the remaining 3 slices to line the sides of the pan. Nobody likes bald sides.

    After getting the pineapple and cherries in the pan, whisk together the cake batter and turn it out into the pan. I filled my 9-inch round cake pan about 3/4-inch full with batter.

    Although the cake doesnt rise a ton, its still a cake and rises some, so dont exceed about 3/4-full, the same idea as when filling a muffin tin. Discard the last bit of batter if need be. I mention this because all cake pans, the exact amount of pineapple, cherries, etc will vary slightly.

    I made the cake before bed and let it cool overnight in the pan with a sheet of foil over it. Theres no big rush to get it out of the pan. And honestly, inverting cakes gives me sweaty palms every time and I was stalling.

    But because of how buttery the topping is, the pan is so well-greased that the cake just plopped right out. Not even one slice of pineapple or cherry out of order.

    I love Pineapple Upside Down Cake, so when I found this great recipe from Cooking From Quilt Country by Marcia Adams, I knew I had to make it! Cooking From Quilt Country is a cookbook from Amish and Mennonite Kitchens. It is loaded with great recipes! Ive tried the Oven Fried Chicken, County Stew and Chicken Corn Stew to name a few. You buy a lot of cookbooks and make a recipe or two and it goes on the shelf. Not this one. Its a keeper!thought I would make it and expected the usual results for , vanilla cake with gooey, sweet topping. This recipe is so much more. The cake is just the right texture and flavor with a secret. Its the Ground Mace. Ground Mace give it such a unique and addicting flavor, you cant get enough of it! And when you think of this recipe, you will remember the Ground Mace in it. This is great to take to a pot luck, family gathering, church, or just to make for your family. I think it is the best as soon as its cooled after baking.

    Although the recipe calls for crushed pineapple and a 9 square or round pan, I made with pineapple rings, and in one of those fancy upside down pineapple pans I bought from Williams Sonoma, just for presentation.

    Mini Pineapple Upside Down Cakes

    Lets Flash back to 5 years agoI had just recently started dating my now husband.

    We ended up taking an adventure over to our local Sur La Table. I believe they had a free knife sharpening event going on, so I convinced Bob to go with me. As you can imagine, me in a cooking store is like a kid in a candy store. There were so many kitchen gadgets I wanted to get. Bob was making me laugh trying on all the aprons and oven mitts. Some of my favorite memories are from this date.

    Everytime I see these pictures, it cracks me up and brings back wonderful memories of that date. He continues to make me smile and laugh each day. I love that about him.

    He ended up buying me theNordic Ware Pineapple Pan. You can imagine what our dessert was the following weekend on our next date! Pineapple Upside Down Cake! I loved how cute they turned out too.

    I have tweaked the recipe that I used each time. With Easter being in late April this year and to honor 5 years later I made Pineapple Upside Cake as our dessert for Easter. I have to say, this might be my favorite Pineapple Upside Down Cake to date.


    • 6 Tablespoons of butter, melted
    • ¾ cup brown sugar
    • 6 pineapple rings from a can, contained in 100% Pineapple Juice , + reserve cup of pineapple juice from can
    • 6 Maraschino Cherries
    • cup reserved pineapple juice
    • cup + ¼ cup milk
    • cup oil
  • Pre-heat oven 350 degrees.
  • Divide the ¾ cup of brown sugar evenly in all 6 cake portions.
