If youve been reading for a while, you know that sometimes I get real stubborn about doing certain things the right way. And theres also a time and a place for shortcut recipes and quick dinners.

Then theres recipes like this Chocolate Cake which tick all the boxes its easier than the way Ive been making everyday cake for most of my life, and the results are better.

Youll love how it really does taste of chocolate even though its only been made with cocoa powder .

Youll love how tender the crumb is, and how it stays moist for 4 to 5 days.

Youll love how the cake can stand on its own so you could just dust it with icing sugar then serve slices with dollops of cream on the side. Though of course, smothering it with frosting never hurts.

This is the famous Hersheys Chocolate Cake recipe which I tried on the recommendation of Michelle from the Brown Eyed Baker . I tried it without massively high expectations, because I thought how much better can this be than the usual, being such a simple recipe?

I love being proved wrong when it comes to food. So wrong in fact, that even though I tinkered with the recipe multiple times, I landed right back where I started using the recipe exactly as written.

How To Tell When Gluten Free Cakes Are Baked Through

Gluten free cakes tend to take a few extra minutes to bake through. This is because they lack the strength of gluten to lift the cake, leading to a cake thats just a tad bit more dense.

This density just means that the cake needs additional time in the oven to heat all the way through. To tell when its ready, always test with a toothpick in the center. If it comes out clean with a few moist crumbs, its ready. If some of the batter smears on to the toothpick, bake for another 2-3 minutes.

If you dont have a baking chocolate bar, semi-sweet chocolate chips will work in both the cake and frosting. Just make sure that the amount of chocolate is the same as written in the recipe.

The amount of fat in the milk is not necessarily important. Many people feel that whole milk gives a better homemade taste to cakes however 1% or 2% would work fine as well.

If you cant use milk, you can also replace the milk with water. There will be a slightly different flavor but the cake will still have the same overall flavor and texture.

You can also use almond or coconut milk. Any substitutions for milk in this recipe can be replaced using a 1:1 ratio.

Please keep in mind that this is only for the cake and not the frosting. Whipping or heavy cream must be used for the frosting in order for it to have the correct consistency.

Does Homemade Chocolate Cake Need To Be Refrigerated

Can you store your chocolate cake at room temperature or does it need to be refrigerated?

The answer depends on how long you want to keep it and what kind of frosting you used.

Unfrosted cake can be stored at room temperature for up to 3 days. To make it last longer, you can tightly wrap and refrigerate the cake for up to a week or even freeze it for a few months.

Chilled cake is actually a bit easier to decorate, so a lot of cake decorators prefer to work with cold cake instead of cake that is fresh from the oven.

If you frosted your cake with buttercream, it can be stored safely at room temperature for up to 2 days. Store in the refrigerator if you want it to last longer, up to 5 days.

If you used cream cheese frosting, the cake must be stored in the refrigerator and will keep for up to 3 days.

I dont recommend freezing frosted cakes.

And remember, frosted cakes are their best the first day or two. After that, the texture wont be quite the same.

Theres nothing better than a cake recipe that can be mixed by hand. Its quicker, easier, and less clean up!

So how does this work? There are four main steps to this recipe:

  • Dry Ingredients All of the dry ingredients are whisked together in the main mixing bowl. This includes sugar as well.
  • Wet Ingredients All of the wet ingredients are combined in a separate bowl or large measuring glass.
  • Combine The wet ingredients are mixed in to the dry ingredients to form a thick and fudgy batter.
  • Water Hot water is then mixed in to help hydrate the cocoa. This then leads to a thin chocolate cake batter thats easy to pour into the cake pans.
  • Thats it! These four simple steps are all it takes to make gluten free chocolate cake batter completely by hand.

    Does Espresso Powder Leave An Aftertaste In Your Recipe

    No. I believe that there is no aftertaste in your chocolate recipe when using the right amount of espresso powder in your recipe. Again, youll want to make sure you arent adding too much espresso powder to a recipe when using it. I make sure to test, test, test my recipes to make sure that the ratios are perfectly balanced especially when including an ingredient like espresso powder.

    As a matter of fact, when I was testing my chocolate cake recipe, I made the cake using a cup of coffee instead of boiling water. It left a strong coffee flavor with an aftertaste. For my next test, I tried using instant coffee granules and boiling water. Still a strong coffee flavor with a bitter aftertaste. Then, I tested with espresso powder and found that it heightened the flavor of the chocolate without adding the flavor of coffee and there was no bitter aftertaste! Eureka!

    Tips For Making This Homemade Chocolate Cake Recipe

    • The cake batter will be very thin and liquid. This is normal! It also rises a lot so be sure not to fill your pans more than half full or so.

    This chocolate cake recipe freezes beautifully and Ill typically make it a few days in advance when preparing for a party. Just wrap the cooled cakes well in plastic wrap before popping them into freezer bags. Freeze them until ready to use, and you can frost them while still cold .     To Use Butter And Other Oils:

    I have tested the chocolate cake recipe with additional oils, as well as butter. Ive tested using an equal amount of melted coconut oil to the vegetable oil called for in the recipe. Ive also tested using the same volume of melted butter in place of the oils in the chocolate cake. While it does make the cake texture slightly different, it is still delicious and worth trying if youd prefer to use butter in place of oils in your chocolate cake.
