The BEST Gluten/Dairy Free Carrot Cake

The other secret to this gluten free cake mix cookies is of course a box of King Arthur Gluten Free Chocolate Cake Mix. I use King Arthur Gluten Free for well, everything. I started baking with King Arthur almost seven years ago, and never went back to anything else.

The King Arthur Gluten-Free cake mix cookies did not survive long in my house at all. Did I mention no one could tell they were gluten free?

Types Of Sponge Cakes

  • This cake is technically a gluten-free chiffon cake since it uses oil instead of butter and baking powder for lift.
  • Genoise is another type of sponge cake that uses melted butter instead of oil, and only whipped egg whites to lift the batter, no baking powder.
  • Angel food cake uses only egg whites and no yolks for an even lighter texture that makes it too delicate to layer. This is usually baked in a tube pan rather than made into a layer cake.

I’ve made loads of sponge cakes since my stint at pastry school back in 2006 and chiffon cake always wins by a landslide. The baking powder helps to make it foolproof, and the oil gives it a tender texture even when chilled. It has a sturdier crumb that makes it perfect for layer cakes. You can also cut it up and layer it into a trifle or tiramisù. It makes a perfect base for tres leches cake, albeit less traditional, since its open crumb soaks up liquid without becoming soggy.

Best Gluten Free Cake Mix You’re Looking At It

You can tell the best gluten free cake mix from inferior ones that will disappoint you by looking at the ingredients. Store-bought mixes have a low price as their first goal–so they use cheap ingredients…like RICE. Check ’em out: white rice, brown rice–if they’re in the top 3 or 4 ingredients, you’re going to get a cake that refuses to rise like it should and that won’t have a beautiful, open cell structure. And it’ll be dry, and crumbly. That’s not how gfJules rolls. If you’re like Jules, you want your gluten free cake it to be moist and spongy and decadent–like the cake you remember. That’s what’s in store for you with gfJules Gluten Free Cake Mix.

Interesting fact: Jules used this very recipe to build the World’s Tallest Gluten Free Cake in 2011 in Washington, DC to draw attention to the FDA’s foot-dragging on Food Labeling that is important to people who need to avoid gluten in their diets. The cake weighed in a just over a ton, and was 11 feet tall! And it tasted DEVINE. Oh, and the FDA kept the promise they made that day and ushered through the legislation the gluten free community was asking for!

This Easy Vanilla Vegan Gluten Free Cake is made in 1 bowl and requires only 8 ingredients. Itâs fluffy, moist, tender and bursting with vanilla flavor. Plus there is no added oil to the cake itself!

After creating the most perfect vegan vanilla cake, I wanted to help my gluten-free friends by baking a version they could enjoy. Youâll want to dig into slice after slice of this fluffy, tender, and moist cake. You canât even tell that itâs gluten-free or vegan! Iâve had plenty of dry gluten free vegan cakes, so I wanted to avoid that outcome at all costs.

All you need to make this cake is 1 bowl and 8 ingredients. Even without any oil, dairy, or gluten, this dessert is exceptionally delicious! Itâs beautifully decorated with my simple vanilla frosting and sprinkles, or use my chocolate frosting if youâd prefer! Ive included a very simple vanilla icing recipe as well.

Until then, youve got this paleo chocolate cake to enjoy. And trust me, you will. I even whipped up a video , so make sure to watch that.

Can You Freeze Cake

Of course, nobody bakes a cake the day of the party, so Im sure you are wondering, can this allergy-friendly cake be frozen? The short answer is yes! You can bake the layers and freeze them, take the cake out of the freezer the day of the party, make the dairy-free frosting, and assemble it.

Want to save more time? Make the entire cake and freeze it, whole, and take it out the night of the party. If you have room in your freezer, then why not? Thawing out this cake does not affect its delicious texture and flavor, and youll save yourself a lot of time.

I know that making an allergy-friendly cake from scratch can seem overwhelming -where do you even find the ingredients? Well, for starters, you are probably using most of them already so know that they are often easy to swap for another brand. This recipe is not brand specific.

For most people with severe food allergies, using a mix out of the box isnt an option, so this version allows you to select your favorite gluten-free flour.

Youll also find that the use of chocolate non-dairy milk gives this cake a moist, rich texture that will bring everyone back for seconds. You can find this dairy-free option in the refrigerated section of your grocery.

What Gluten Free Cake Mix Do You Use

So, I tried out both King Arthur Gluten-free Yellow Cake Mixand Krusteaz Gluten-free Yellow Cake Mix. I know there are others out there, but I find these are typically easily found in big box stores . Please note that if you have a dairy allergy like we do, that some gluten-free box mixes use milk in their powdered mixes, so if you choose to try this formula on another box mix that you read the label carefully.

Ive had some readers lament when I use aquafaba, like in my fluffy pancakes. I simply adore aquafaba . It whips up like eggs whites and its the closest egg white substitute Ive ever found. However, I know some people cannot do beans. While I have not personally tried this, I have had some readers have success using applesauce instead of aquafaba. I just feel that applesauce is heavier and since it cannot whip it does not give the same lightness and texture a whipped aquafaba will. I prefer the crumb of my cake to have some air holes and not be dense. By using aquafaba, I feel this is the closest way Ive ever found to achieving the most real like cake crumb and mouthfeel.

Also, for those wondering that have never used aquafabathere is ZERO hint of bean flavor. PHEW! Youd never know.
