Making Eggless Cakes is always a challenge as it can be hard to achieve the perfect, light consistency we associate with good cakes without using eggs.

Adding to that challenge, the addition of whole wheat flour can often cause a cake to be much denser and stodgier than those made with all-purpose flour.

The secret to achieving the light and spongy consistency in this vegan chocolate cake is the reaction between the baking soda and lemon juice.

These two ingredients work together to cause the cake to rise perfectly, giving it the soft, moist texture that were looking for.

NOTE: This recipe may resemble chocolate wacky cake, but it is not the same. The recipe proportions for this eggless chocolate cake are different from the wacky cake. My eggless chocolate cake also uses whole wheat flour and chilled water unlike in a whacky cake.

What Can Replace Eggs

Various homemade egg substitutes are worth trying here are some that the AAFA says will replace one egg in recipes where the main action of the egg is as a binder .

  • 1/2 of a medium banana, mashed.
  • 1/4 cup of applesauce.
  • 3 1/2 tablespoons gelatin blend .
  • 1 tablespoon of ground flaxseed mixed with 3 tablespoons warm water .

Where the eggs you are using are needed to make the cake rise, try making a simple leavening replacement by mixing 1 to 1 1/2 tablespoons vegetable oil with 1 to 1 1/2 tablespoons water and 1 teaspoon baking powder. This is enough to substitute for one egg, so double the quantities if you are replacing two. Note it’s really important that it is baking powder, not baking soda, that you use.

Eggs serve two purposes in baked goods:

Substitutes For Egg In Cake

If you are seeking a substitute for any ingredient, then the first thing you should do is to ask yourself the role of the ingredient in that recipe. This same rule applies to eggs. When it comes to cakes, eggs serve three purposes, out of which two are very essential. The third is more of a secondary purpose.

  • Eggs as a binding agent: Their use as a binding agent is effective because eggs are viscous liquid, and thus, they can help to hold the ingredients together. This is very important for cakes, as it helps to establish the cakes structure and texture.
  • As a leavening agent: Some people dont know this, but eggs in a recipe can actually make the cake rise. They are good leavening agents. Thus, substitutes include ingredients like baking powder, gelatin, yogurt, and baking soda.
  • Glaze: Made a glaze before? If you did, then you probably would have used egg whites in making your glaze.
  • So eggs are not ordinary ingredientsthey do more than just adding flavor and richness to cakes. They bind, leaven, and act as a glaze for cakes. If eggs are so important, then why are we considering to substitute them? Well, because not everyone can consume eggs.

    Aside from the fact that not everyone can consume the real thing, egg substitutes come in handy when you start baking and realize that you have no eggs. Or maybe youre super unlucky and the only ones you had all fell and broke.

    How to Make a Cake without Milk and Eggs

    17. Bake it for 23 to 25 mins. Mine was done at 25 mins. Do check at 23 mins as the timings slightly differ from oven to oven. If baking in cooker, place the cake tray on the hot pot stand or ring. Cover and bake for 45 to 55 mins on a low flame.

    18. When the cake is done, a skewer inserted comes out clean.

    19. Cool the cake in the pan for 15 mins. Invert it on a wire rack.

    20. Remove the parchment paper and allow to cool completely.

    21. I made a simple and quick buttercream frosting. I havent shared the pics of the same as the post is already lengthy and may intimidate many. If you are interested please follow the instructions in the recipe card.

    I have not included the time taken to make the frosting in the recipe card. You can make a rough estimation of 2 hours for the frosting if you are a beginner.

    • Measure the ingredients correctly. I highly recommend using a kitchen scale.
    • Preheat the oven at least 15 minutes before getting started to give it plenty of time to reach the ideal recipe temperature.
    • Dont overmix the batter. Instead, mix just until youve evenly distributed the ingredients throughout the batter.
    • Bake the batter as soon as it is ready.
    • Dont open the oven door until your baked good has set. Leave the oven closed until the minimum time stated in the recipe.
    • Every oven is different, so baking times always have to be taken with a grain of salt. Oven thermostats can be wildly off, and that will all affect baking time, so keep an eye on yours.

    Baking Powder + Bicarb + Vinegar

    This is our favourite swap for fluffy cakes. Eggs give bakes structure and lift, and a little extra raising agent plus an activating acid can handle this too. The swap is unnoticeable in small bakes, such as our vegan muffins and vegan chocolate cupcakes. Likewise, it works like a dream in eggless fluffy pancake mix . You can stretch this solution to a big birthday-style cake, such as our eggless chocolate cake and the luscious vegan chocolate peanut butter cake pictured below.

    Caution bakes can be a little dry, and too much raising agent will give a metallic taste. Always sift in bicarbonate of soda so small lumps are evenly distributed. Our eggless lemon drizzle cake gets around any dryness with its post-bake drizzle. Other solutions are to add more milk or yoghurt to the recipe, frost generously, or heap on plenty of whipped cream and fresh fruit.

    We dont recommend a formula for this egg replacement because there are too many variables and the results could be unpleasant. Its best to use a tested recipe.

    Vanilla Cake Without Eggs

    Not to be outdone, my vegan vanilla cake is equally amazing. I use this recipe as a vegan birthday cake all the time for friends that avoid dairy and eggs. However, if dairy is okay with you, I recommend buttermilk for this cake, but leave out the vinegar in that casethe buttermilk brings all the acidity needed to react and make a cake rise perfectly.
