Today’s recipe on rainbow mille crepe cake reminds me that a lot has changed since I posted my Green Tea Mille Crepe Cake recipe last Fall. I hadn’t mentioned it before but I was actually pregnant with my first child who was born this Spring. It was a bit of a journey to bring my little Bibi into the world and I was always a bit nervous about crossing that finish line. I’m so happy to finally announce the birth of my daughter today with this celebration rainbow crepe cake and a giveaway!

Does Crepe Cake Requires Special Ingredients

This is a simple recipe with a fairly inexpensive list of ingredients. If you dont have vanilla beans, you can easily swap in vanilla paste or vanilla extract. As for the other items, they are staples youd normally have in your pantry.

Once you get the technique of swirling the batter in the crepe pan, making this cake is a breeze. It is also a lot easier and faster if you have more than one crepe pan cooking at a time.

You can make as many layers as youd like or even steal a couple layers to make yourself a nice savory snack.

Once youve made pastry cream, youll want it in all sorts of desserts. Here are a few of my favorite recipes with pastry cream: banana cream tarts, chocolate glazed eclairs, and speculoos banana cream parfait.

Finally Assemble The Vanilla Mille Crepe Cake

  • Assemble the vanilla mille crepe cake. Assembling the vanilla mille crepe cake is easy but time consuming. Place a crepe on a flat plate or cake stand. Sprinkle ¼ teaspoon granulated sugar over the crepe, then scoop 2 Tablespoons of whipped cream in the middle of the crepe. Use an offset spatula to spread it evenly over the crepe, just like you would spread butter on toast. Place another crepe on top of these layers, and repeat the entire process over and over again until you have just one crepe left.

Doing so allows the crepe cakes to absorb the sugar and cream, leading to a more flavorful cake.If youre pressed for time, you can skip this step. However, I dont recommend it. Slicing the crepe cake will be a nightmarethe crepes will slip and slide as you do so. Chilling the cake helps prevent this from happening.
  • Brulee the top of the vanilla mille crepe cake. If you want to go the extra mile, use a chefs torch to brulee the top of your vanilla mille crepe cakeits how they do it at Lady M! Simply sprinkle 1 Tablespoon of granulated sugar over the top crepe and torch it until the sugar melts and caramelizes. If you go this route, you need to serve the mille crepe cake immediately after bruleeing. The brulee tends to soften the longer it sits, losing its signature crunch.

    Im too lazy to make the crepe batter from scratch. Can I use box mix?

    Yes! In a pinch, you can use box mix crepe batter to make this vanilla mille crepe cake.

    Why do I need to rest the crepe batter?

    Great question! During this resting period, the starch molecules in the flour absorb the milk, eggs, and butter in the batter. Doing so causes the molecules to swell, giving the batter a thicker and more viscous consistency thats easier to cook when making crepes.

    Additionally, the gluten formed during the whisking process relaxes. Any air bubbles in the mixture also slowly work themselves out of the batter. Both processes make the crepes extra tender and delicate.

    Do I need to grease the pan when cooking the crepes?

    Nope! Not if you use my recipe to make the crepes from scratch. Because of the butter in the batter, the crepes are self-greasing, especially when combined with the nonstick surface of the pan. I actually find that even using a light spray of cooking oil or butter to grease the pan beforehand leads to overly browned crepes.

    I dont have a chefs torch. Do I really need to torch the top of the vanilla mille crepe cake?

    Nope! If you dont have a chefs torch, feel free to skip the step of bruleeing the top of the vanilla mille crepe cake. Instead, just serve it with any leftover whipped cream and/or garnish with fresh fruit.

    First Make The Crepe Batter

  • Prep the ingredients for the crepe batter. The ingredient prep for this crepe cake recipe is easy! Simply measure out ingredients like eggs, flour, milk, and butter. Thats it! The recipe works best if ingredients like eggs and milk are still cold and straight from the fridge. No need to bring them to room temperature beforehand!However, you will need butter thats been melted and cooled slightly. I suggest melting the butter first to give it time to cool while you measure out and prep the rest of the ingredients.
  • Make the crepe batter. Similarly, making the crepe batter itself goes by fairly quickly. Simply whisk together the eggs and salt. Then, alternate whisking in small amounts of flour and milk. Once completely combined, add the melted butter.
  • Rest the crepe batter. Now comes what is admittedly an annoying part of the recipe: resting and chilling the crepe batter. There are several reasons why most crepe recipes instruct you to rest the batteryou can learn more in the FAQ below. But TL/DR, its the secret to perfectly thin and delicate crepes that still hold up in this crepe cake.If you dont want to wait an hour for the batter, you can make it up to 48 hours in advance.     Homemade crepe cakes are one of those desserts that look incredibly intricate and difficult to make, but that are secretly one of the easiest desserts to whip up. But however easy they are to make and assemble, they do take a lot of time. This hazelnut chocolate crepe cake recipe takes almost three hours to make, but most of that time is spent waiting for the batter to thicken up and for the cake to set.

    Now, onto the part of this cake I know youre most nervous to tackle: the crepes. Crepes are essentially paper thin pancakes that the French are lucky enough to enjoy whenever they feel like. Crepes themselves arent that sweet, and they can be filled with any number of sweet or savory fillings.

    To make crepes, youll need a legit crepe pan or a large non-stick skillet . To make the crepe batter, its just a matter of whisking together all the ingredients . Youll then need to let the batter rest for a good 30 minutes, or until small bubbles start to form on top. This step is crucial, so dont skip it!

    Once the batter has had sufficient time to rest, you can finally make the crepes.     1. In the bowl of a stand mixer fitted with whisk attachment, beat butter and condensed milk with whisk attachment on high speed 7 minutes. It should look whipped and lightened in color.

    2. Add 8 oz of softened cream cheese 1 Tbsp at a time while mixing on medium high speed. Continue beating for 3 minutes or until no longer lumpy. Add 2 tsp vanilla and whisk until well incorporated and smooth. Some tiny lumps are ok and will not be noticeable once the cake is ready to enjoy.

    Why Are Mille Crepe Cakes So Expensive

    The first time I ever had a matcha mille crepe cake, I remember being surprised that each slice of cake cost between $9.50-$13.50 CND at the specialty dessert shops that sold it . By the looks alone, I knew it involved extra care to make mille crepe cakes because of the multitude of layers that comprised this special cake.

    What I didn’t know was how long it actually takes to pan fry each and every single crepe needed to make up just one cake. From my own experience, each crepe took approximately 2-3 minutes to prepare and pan fry. If you take that and multiply it by the amount of crepes you’ll actually need, it will take almost 2 hours just to make the crepes alone!

    Mind you, it’s not like a regular cake that you can put it in the oven, set it and forget it. You literally need to stand in front of the stove watching over the crepes the entire time so you won’t be free to use your time for other more productive endeavors like doing the dishes or cleaning the kitchen. You’ll also need to factor in the time it takes to prepare the crepe batter, wait for it to develop and after making the crepes itself, you’ll need to assemble it with filling, layer by layer. It’s very labor intensive but I adopt the same view towards it like I do for good Macaron Art – the results are well worth the challenge.

    Every crepe cake needs to start with the perfect crepe batter.

    Our crepe recipe has sugar and a little vanilla to make the batter more sweet than savory, which is perfect when you are making a cake.

    Crepe Ingredients:

  • 3 tablespoons of salted butter
  • 1/2 teaspoon of vanilla
  • 2 tablespoons of sugar
  • Place all of the ingredients in a blender and blend on high until completely combined. Cover the blender and place it in the refrigerator for one hour to allow the bubbles to settle. Too many bubbles in the batter will cause the crepes to rip when you are trying to flip them.
