The batter comes together in 2 mixing bowls. Whisk flour, unsweetened natural cocoa powder, baking soda, espresso powder, and salt together in one bowl. The espresso powder is optional, but definitely use it if you have it. Espresso powder accentuates and deepens the chocolate flavor. In another bowl, whisk oil, sugar, egg, vanilla extract, and buttermilk. Buttermilk is our acidic ingredient and crucial for this cakes rise. Like I recommend with all my 6 inch cakes, use a parchment paper round. Trace the bottom of your 6 inch cake pan on a large piece of parchment paper. Cut out the parchment circle. Very lightly grease the cake pan. Place the parchment round inside. Grease the parchment round too. Using butter or nonstick spray, I grease the pan AND the parchment. This promises an ultra non-stick environment for your small chocolate cake.
Though its diameter is small, this is a thick chocolate cake. Its pretty moist, too. Because of its thickness and delicious moisture, the cake may sink a little in the very center. Dont fret over that. As long as a toothpick inserted in the center of the cake comes out clean, its done.

- Make sure you preheat your oven before starting. Weve included temperatures for standard AND fan or convention ovens.
- If using springform pans, note that they are NOT 100% leakproof. Very thin cake batters such as this one will leak through the base. To combat this issue, line the base with parchment paper coming up where the sides meets the base to create a cover. Place a baking sheet on the shelf below the cake pan to catch any stray drips. Dont put cake pans directly on the pan as the heat will effect the base of your cakes.

There are two main ways that you can make the chocolate sauce the first one using cacao powder and the second with melted chocolate
Chocolate sauce with cacao powder:
- in a saucepan melt about 1/2 cup unsalted butter
- add 3 to 4 tablespoon cacao and 1/2 cup sugar
- keep stirring for about 2-3 min until you get a thick chocolate sauce.
Chocolate sauce with melted chocolate:
to melt the chocolate get a saucepan with water inside and add it on medium heat when the water starts Evaporate put a bowl on top of the saucepan and add the chocolate chip into it, make sure the bowl doesnt touch the boiled water.

How To Store Unfrosted Cake Layers
To start, we need to cool off the layers completely. If you start wrapping it up while warm, it will release the condensation and will get soggy and will stick to the wrap.
After the layers are completely cooled off, you can wrap them tightly with a plastic wrap. Dont leave any areas uncovered as it will result in dried out cake. Here are 3 options to store it:
- On the counter top. Its absolutely safe to leave it on the counter and it will stay fresh for 3-4 days.
- Refrigerate. You can refrigerate the covered layers for one week.
- Freeze. If you want to freeze it, you will need to wrap it with foil after covering with plastic wrap. This way it wont get freezer-burnt. You can freeze it for up to a month. To thaw, just leave it in the fridge overnight or on the counter for a few hours.
