The cake is slightly more authentic tasting when made with a gluten flour, but if you need it to be gluten-free, my gluten-free flour blendis the only type of gluten-free flour that will work.

I created this flour blend by default in one of my many attempts to get this recipe to work. I was trying to get a flour with a high amount of protein to bake up like wheat. It worked in this recipe and then I tried it in my other gluten-free baked goods and it has worked perfectly in everything else too.

Note: You must double the amount of garbanzo bean flour when making it gluten-free.

Typically, you would insert a toothpick into a cake to see if its done, but this isnt the case with a porous cake like angel food cake. So how do you know?

When your angel food cake is done, it will spring back when lightly touched. You should not see any type of indentation left from your finger if you do, place it back in the oven to bake a little longer.

The outside should also be a beautiful golden color. Once you have the color and the spring you know its ready.

Another way to test your made from scratch cake is by using a thermometer. When inserted in the center it should read at least 205 degrees Fahrenheit to keep it from collapsing.

For this gluten-free angel food cake, err on the side of over-baked rather than underbaked. An underbaked angel food cake won’t hold its structure and will come out overly moist and gummy. To tell when your cake is done, your cake should spring back when gently touched in the middle and a tester should come out clean when inserted.

When in doubt, keep it in for a few minutes longer. I’ve yet to overbake this angel food cake!

How To Make Gluten

Gluten Free Angel Food Cake

1. In the bowl of a food processor, process the gluten-free flour and powdered sugar together until smooth, about 30 seconds.

2. Sift the flour/powdered sugar mixture into a bowl and set aside.

3. Process the granulated sugar slightly, about 5-7 pulses. You dont want to turn it into powdered sugar, just a little finer than it is normally. Set aside.

4. Place egg whites in the bowl of a stand mixer. Add the salt and cream of tartar. Using the whisk attachment, beat on medium speed until starting to foam and soft peaks form. You can also use a hand mixer.

Tip: You can separate the egg whites from the egg yolks or simply buy carton egg whites for this recipe.

5. Add the pure vanilla extract and almond extract and continue whipping on high speed.

6. Add the granulated sugar slowly, about 2 tablespoon at a time to the egg whites while they are whipping.

7. Continue whipping until stiff peaks form.

8. Slowly fold in the dry ingredients ¼ a cup at a time with a rubber spatula. Do this carefully and slowly so you dont deflate the egg whites. This is the key to good traditional angel food cake!

9. Spread the angel food cake batter in a ungreased, 10-inch round angel food cake pan.

Tip: An ungreased 10-inch tube pan is key for this recipe. You need a special round angel food pan for best results so the cake can have enough room to expand. Unfortunately a bundt pan wont work the same.

Is Cream Of Tartar Necessary For Angel Food Cake

Cream of tartar, or potassium bitartrate, is a powdered acid that is most commonly used in baking, but is also a byproduct of the wine-making process. The purpose of cream of tartar in angel food cake is to help stabilize and add volume to the egg whites. This is crucial in getting the height and texture characteristic of a sponge cake.

Cream of tartar is available at most grocery stores, however, not everyone has it on hand. For this reason, I used lemon juice in this recipe instead. Lemon juice provides the same acidic properties as cream of tartar and can be used as a suitable substitute. So yes, you can make angel food cake without cream of tartar.

Other cream of tartar substitutes include vinegar, baking powder, buttermilk and yogurt . I have not tested any of these for this recipe, and I would not recommend using vinegar as a substitution here. But if you have tried any of these other substitutes successfully, please do let me know!

If you dont have a tube pan, I dont recommend using another similarly-shaped pan like a bundt pan . Instead, you can divide the batter between two high-sided nonstick loaf pans, and start checking for doneness after 20 minutes.

Youll need to cool the cake upside down on top of a wire rack, which wont elevate the cake as much as it should. You will have a harder time getting the cake out of the pan, but it shouldnt be impossible.

You can also try making our recipe for gluten free pineapple angel food cake, which is a bit heavier, and made in a round cake pan. Not only that, but you dont even have to sift the dry ingredients for that cake!

But even with the sifting, this recipe is so simple and never fails to impress. Let the celebrations begin!

How To Make Gluten Free Angel Food Cake

Gluten

Start by adding egg whites, cream of tartar, and salt to the bowl of a stand mixer fitted with the whisk attachment, or a large glass bowl if youre using a hand mixer.

The egg whites DO NOT need to be at room temperature cold is fine!

Beat on medium speed until the egg whites are frothy, 1 minute. Add vanilla extract then beat to combine.

Next, add granulated sugar to a blender or food processor then blend or process it briefly to create fine sugar. Were not looking to make powdered sugar, but the finer sugar granules will dissolve faster and easier in the cake batter vs regular-size sugar granules.

Slowly but consistently sprinkle the sugar into the mixing bowl with the speed on low. Once all the sugar has been added, turn the speed up to medium-high then beat until the egg whites are glossy and medium peaks have formed.

Like this! Youll know youve got the right texture when the tip of the batter slightly droops on itself. Stiff peaks would stick straight up, and soft peaks would totally droop. You want it right in between.

Next, whisk together a gluten free baking flour blend WITH added binder, plus corn starch in a small bowl. I tested this recipe using Bobs Red Mill Gluten Free 1-to-1 Baking Flour and loved the results!

Add the flour mixture to the egg white mixture in three batches, mixing until just combined before adding the next batch.

I usually use a wine bottle covered in foil this is a Topo Chico bottle here in these photos. Use whatever youve got!
