Ingredients Needed To Make The Momofuku Milk Bar Cake

Not gonna lie. There are also some specialty ingredients in this cake as well. I thought about taking some shortcuts, but I decided to go for it and see what the fuss is all about. Glad I did.

Cake Crumbs:

  • Sugars The crumbs use both brown sugar and granulated white sugar.
  • Cake Flour A little low protein flour to help bind the crumble together
  • Baking Powder To help give the cake crumbs so lift so they arent dense.
  • Salt I used table salt so I used less than called for since the original recipe used kosher salt. Kosher salt is bigger in granules so you need more.
  • Rainbow Sprinkles Of course, sprinkles. Because hello ultimate funfetti cake is what we are going for here.
  • Grapeseed oil
  • Clear vanilla extract this is what Christine recommends using because it gives it that classic boxed mix taste.

Funfetti Cake:

  • Milk I used whole milk, but I think a lower fat milk would be fine. Its used to soak the cake layers to help keep them moist.
  • Vanilla A little more flavor here. Nothing wrong with that. Really drives home the vanilla cake flavor.

Make The Cake Crumbles

Combine ingredients in a medium bowl, stirring to combine until it comes together in a crumbly dough. Spread them over a parchment-lined baking sheet so you have some bigger and some smaller crumbles.

Bake for 10-15 minutes until crunchy. You may want to stir them partway through baking. Cool completely and set aside for assembly. This step can be done a few days ahead, but be careful because these crumbs are hard to resist and you might find you’ve eaten all of them before you have a chance to assemble the cake!

Additionally Here Are Some Tips That Make It Easier To Frost A Cake:

Milk Bar Birthday Cake (Easy Homemade Version)
  • Temperature matters: Chill your cake layers before assembling, and chill the cake after you have built your layers as it helps keep your cake evenly stacked.
  • Apply a crumb coat: Frost the cake with a thin layer of frosting that locks in any stray crumbs
  • To achieve a smooth finish: Once you have finished frosting the cake, chill again for 10 minutes and then heat the bench scraper or off-set spatula with hot water and make one final swoop to smooth it all out.

How Do I Make A Milk Bar Cake Ahead Of Time

I get it. This cake is not for the faint of heart. So here is a breakdown of the components and their make ahead schedule:

Cake crumbs: Up to a week ahead of time. Store at room temperature. You can also store these in the freezer for 1 month.

Cake: You can store this, cooled and wrapped, in the fridge up to 5 days.

Frosting: Store in the fridge up to 1 week ahead of time. Bring to room temperature before using.

Whole Cake Assembled: Store in the fridge, covered up to 5 days. Freezer, covered, up to 2 weeks.

Two: Make The Milk Bar Funfetti Cake

Okay, step one done! Lets make the cake. Start by mixing together the dry ingredients.

And then in a second bowl, you want to cream your butter, shortening and sugars until light and fluffy, about 3 minutes. Then add the eggs one at a time. You want to then add the oil, buttermilk, and vanilla and mix again to medium high and beat again for 4-6 minutes. The mixture will be light in color and liquidy.

On low speed, gradually pour in the buttermilk mixture. Increase the mixer speed to medium-high and beat for 4 to 6 minutes, until the mixture has nearly doubled in size and is completely homogenous . Stop the mixer and scrape down the sides of the bowl.

On low speed, gradually add the flour mixture and mix just until the batter comes together, about 45 to 60 seconds. Scrape down the sides of the bowl and give the batter a final mix with a rubber spatula.

Then Dont forget to add those sprinkles!

Then spread the batter into your prepared sheet pan and bake. Once the cake springs back, or a cake tester comes out clean its done. Allow to cool. You can make the cake ahead of time, up to 5 days. Just allow to cool and then wrap and store in the refrigerator.

Why Is It Called Milk Bar

With time, milk bars began to offer goods typically associated with grocery stores, while, according to Donnelly, the corner shops began to adopt the milkshake and therefore the title milk bar from both ends, the milk bar essentially became a term to refer to a corner shop, akin to a deli or a bodega.

Best Gluten Free Low Carb Birthday Cake Recipe

No-Bake Birthday Cake Protein Bars (gluten free, low sugar, vegan optional!)

Since its my birthday today, I wanted to celebrate with a pretty birthday cake. I actually made the cake yesterday and since I had all of the other recipes ready I only had to concern myself with preparing and assembling the cake.

Ive made homemade birthday cakes for my family for over twenty years. Its something I really enjoy. Eight years ago I started baking gluten-free low carb birthday cake recipes. They arent any harder to make than regular cakes and I enjoy them even more. Maybe youve seen the low carb chocolate birthday cake or the low carb peanut butter chocolate birthday cake I shared last year? They were fun.

When I first began my low carb journey I wasnt sure I would ever eat baked goods again, let alone sugar free cakes. That changed the moment I saw the beautiful cover photo of Elana Amsterdams cookbook, The Almond Flour Cookbook, which featured a chocolate almond flour cake. I knew then, that enjoying the occasional low carb keto treat would be possible.

This is the first time I have shared a gluten-free low carb birthday cake recipe that was vanilla, although I do have a nice recipe for vanilla cupcakes. I usually post low carb chocolate cake recipes just because low carb vanilla cakes made with almond flour and coconut flour are so dark in color. Theres no way around it really. Of course, I could have used a cheaper butter and egg whites instead of whole eggs, but I didnt.

The Best Gluten Free White Cake

The Best Gluten Free White Cake is tender and moist, while dense enough not to crumble at the touch of a fork, this is exactly what I want in a white cake.

Topped with creamy fresh strawberry frosting, or a classic buttercream, this cake has received more thumbs up over the past ten years than anything else Ive baked. The flavor combination is absolutely perfect with both almond and vanilla flavors.

Tell More Me About This Cake

This gorgeous birthday cake features three layers of funfetti cake. In true Milk Bar style, its made using one sheet pan, rather than multiple round cake pans . Ive used my favourite buttery, Funfetti Cake recipe, that produces a soft and fluffy vanilla cake every time.

Next, is that vanilla buttercream. But while I love my regular buttercream frosting, weve made it even more special by swapping milk for Greek yogurt. The real Milk Bar recipe has cream cheese in the frosting, so this is our easy way of getting that similar tang. Another secret ingredient in our frosting is a hint of baking powder. Believe it or not, this helps make the lightest, fluffiest frosting ever. This frosting is so good, youll find yourself licking the bowl clean.

The secret ingredient in our frosting is a hint of baking powder. Believe it or not, this helps make the lightest, fluffiest frosting ever.

And then theres those crunchy, crispy cookie crumbs. These little funfetti shortbread crumbs take only minutes to make but they enhance the sweet, buttery, vanilla flavour profile were going for here. And they provide a unique textural element to the cake. Were obsessed with them .

Momofuku Milk Bar Chocolate Birthday Cake

Milk Bar Birthday Cake Unboxing and Tasting

This chocolate birthday cake is a variation of Christina Tosis Momofuku Milk Bar confetti cake. Instead of a vanilla confetti cake, we use a chocolate cake.

Not too long ago, my family and I were watching a show on Netflix. I cant remember the name of it, but it featured chefs from all types of cuisines from around the country. The one episode we caught highlighted Christina Tosi of Momofuku Milk Bar. She talked about her journey to creating Milk Bar and her inspirations for recipes.

She featured two recipes that episode confetti birthday cake and grasshopper pie. Naturally, my husband and daughter both asked me to make these. I cheerfully told them that I had already made the confetti cake but I would be happy to try to make the pie. With my husbands birthday AND Fathers Day approaching, he asked if I could make a chocolate version of the confetti cake for his birthday and the grasshopper pie for Fathers Day.

    Challenge accepted.

I did a quick internet search and found a recipe for Christina Tosis chocolate cake so I used it here. I kept everything else from the original confetti cake from the crumbs to the soak to the frosting. If you dont want sprinkles in your cake, leave them out. If you want to use a chocolate frosting instead, be my guest.

Happy birthday to my wonderful husband! And Happy Fathers Day to all the wonderful fathers!

Can I Use Regular Milk In The Cake And Real Butter In The Frosting And Get The Same Results

Yes. You can make this cake with dairy, or without dairy. It just as amazing. Both ways deliver a delicious, tender, bakery style cake.

This lemon cake moist but not wet, and it keeps well in an airtight container in the refrigerator. The tender cake, tart lemon curd filling, and smooth frosting makes the perfect lemony treat.

    Why You’ll Love This Cake

Besides that fact that we are talking sprinkles and cake, here are a few reasons to try making the Milk Bar birthday cake at home!

    • Easy substitutions. The original recipe calls for some unusual things like citric acid and glucose. But since most home bakers don’t have those on hand, I opted to replace them with common or at least easily accessible options instead.
    • It’s a showstopper. Bring this out for any occasion and you’ll hear oohs and ahhs of delight.
    • No fussy decorating. If you don’t have frosting or piping skills and your cakes look “rustic” or “homemade” , then this cake gives you the advantage because it’s supposed to look that way!

Tips For Making This Momofuku Birthday Cake Recipe

    • Use the correct pan: I read other blogs stating they had issues making this in the incorrect pan and having the cake bubble over. You need to use a 10×15 jelly roll pan.
    • Make Ahead: Use the times above to figure out how to break down this process. And dont forget this cake has to freeze for 12 hours, and then defrost a full 3 hours in the fridge before serving.
    • Vanilla Extract: Worth the splurge. The flavor really was true to that vanilla cake mix flavor. Of course you can substitute the regular vanilla, but be aware the cake and frosting will have a darker hue.
    • Frosting: I doubled the amount based on other reviews. Some suggested using 1.5x the original recipe called for. So you may have some leftover.
    • Oil: I did not use grapeseed oil either. You can replace that with another neutral tasting oil such as vegetable or canola.
    • Glucose syrup: I did use this in my frosting and helps to make it smooth. But if you dont have it, you can replace with more corn syrup but it can make your frosting sweeter than intended and texturally not the same.
    • Salt: I used table salt, so I adjusted this amount in the recipe for what I used. If you are using kosher salt you will need to increase the amount slightly.
    • Citric Acid: I didnt use this either but used lemon juice instead. But that little bit of acidity does help to balance the frostings sweetness.
