Rectangular And Square Pans

Based on their performance in the round cake pan test, we skipped a few pans we would have otherwise tested: Williams-Sonomas Goldtouch Nonstick Square and Rectangular are made by USA, and they were the top choice of Cooks Illustrated, but were too expensive at almost twice the price of the USA pans.

Williams-Sonomas Traditionaltouch uncoated pans are less expensive, but they bake a paler cake and dont come with the ease of nonstick.

Fat Daddios makes pans with perfectly straight sides in many, many sizes, but a big chunk of cake got stuck to the round pan we tested.

And the Cuisinart Easy Grip 9-Inch Square Baking Pan, recommended by Tish Boyle, has the same dark sides that over-browned a round cake, and also doesnt come in an 8-inch size.

As mentioned, we liked the Calphalon Nonstick Bakeware rectangular and square pans, but the nonstick coating is darker than on the USA pans and yields a darker cake.

Wiltons Perfect Results square and oblong cake pans could have been a nice option because they were the only pans with handles, plus theyre super affordable. But unfortunately that low price translates to a pan made of much thinner metal than the USA or any of the other pans. It was thin enough to overbake the outside of the cake, and to be at risk of denting.

A Guide To Common Cake Pan Types

But what if you’re not ready to invest in a new set of pans? Or what if you’re attached to the ones you have? Knowing how each type will behave can help you adapt recipes to your particular circumstances, ensuring better outcomes with your cakes at home.

With that in mind , I wanted to lay out a guide to some of the most common types of cake pans. To ensure we’re comparing apples to apples, almost all of them are eight inches across, which, given the same amount of batter, helps produce thicker layers than a nine-inch pan .

The Best Round Cake Pan

Pair of 2 Vintage Wear Ever Removable Bottom Round Cake ...

*At the time of publishing, the price was $12.

If youre an ambitious baker, you may want to tackle tiered cakes, and youll need a wider variety of sizes than just 8, 9, and 10 inches . Or maybe you dream of making enormous cakes, or tiny, 4-inch cakes for two. For that kind of variety, Id recommend Parrish Magic Line, which makes pans in every size between 3 inches and 16 inches, at prices low enough that you can afford to expand your options. We saw Magic Line pans recommended many times in forums like Cake Central, and the 9-inch pan is well-reviewed on Amazon with 4.8 stars out of more than 250 reviews. Though we found they baked cakes paler than other pans, this can be remedied by an extra few minutes in the oven. Magic Line pans arent completely nonstick, but they do release cakes better than Fat Daddios, the only other brand to come in so many sizes. Its safest to line the pan with parchment, but its good to know that im a pinch it should work just fine without.

Lightly spray pan and tube with baking spray .Made of 16 gauge aluminum. Many kitchen supply stores carry these pans.Meaning, i had to leave it in the oven longer.

Meaning, it got a little overdone and tough around the outside.Needless to mention, a tube pan is one that has a tube in the middle.Objects baked or molded in the tube pan will come out in the shape of a ring. One feature that tube pans often have but bundt pans lack is a removable bottom.

How Do You Keep A Cake From Burning On The Bottom

Over-burning the cake spoils the taste and appearance.

The good news is that its pretty easy to prevent the cake from getting burned on the bottom with a couple tricks.

    Heres how:

    • Create a paper wall- Add a sheet of tin under the cake pan to protect the cake from browning. You can even double up and add two layers of the paper to establish a stronger barrier.
    • Smooth the cake A smoother surface, made for instance with a spatula, can help prevent uneven browning. Flatten it before adding the cake to the oven.
    • Use a deeper pan Youre more likely to end up with a burned cake if youre baking in a shallow pan. Check that its deep enough for your cake before you start to bake.
    • Reduce the baking time You may also need to knock some minutes off the suggested baking time to protect your baked goodies from burning or browning.

How To Choose The Best Cake Pans

    • Email

Cake is a complex thing. Even when you start with a flawless recipe, factors ranging from creaming technique to ingredient temperature can affect how the cake turns out. I used to work full time at a wedding-cake boutique in Greenwich, Connecticut, and I continued making wedding and special-occasion cakes for the restaurants where I worked long after I transitioned into that world. Which is to say, I know my way around cake.

In my experience, one of the most important factors in success is a good cake pan. One that conducts heat to the batter steadily so the cake can rise even and flat one that’s large enough to give the batter room to grow, and light enough to keep the crust delicate and thin. You’re not gonna find a pan like that at a grocery store, but nor should you shell out some exorbitant amount at a specialty store in the mall. Great cake pans can be purchased on the cheap at restaurant- and baking-supply stores, or online for a little bit more.

How To Use A Cake Pan With Removable Bottom Step By Step

Were assuming that youve your ingredients all set so we will go straight into baking.

    Step 1: Prepping the pan

Your first step is to lock the two parts- the band and the bottom together.

To do this, open the spring on the band and place the part on a kitchen table or even a countertop.

Next, you place the removable bottom in your band.

The final thing to do here is close the spring to have the two pieces lock together.

    Step 2: Test for leaks

Leaks can mess everything and you want to test your pan for any leaks before you start baking.

This is quite simple: just fill the pan with water and check if theres water spilling from the pan .

Do You Need To Line The Sides Of A Cake Tin

SANNENG Deep Round Cake Pan with Removable Bottom, 6 ...

You dont have to line the sides of a cake tin with baking parchment or greaseproof paper however it does stop the cake from burning around the outside and it stops the cake from sticking to the edges too.

If youd prefer not to line the edges, then a light greasing of butter or oil should do the trick and stop it from sticking. Run a knife around the edges between the cake and tin before removing it from the tin. This will help to loosen the cake from the edges. You may need to cut off the edges of the cake if they catch or brown quicker.

What Else We Recommend And Why:

Wilton Performance Pan Aluminum 8″ Round:This is another good option for those who prefer uncoated pans. The cake came out with relative ease, but compared to our current pick for best uncoated pan, a thicker layer of crust stuck to the Wilton pan. Ultimately, I did not have major issues with this pan and I’m a big fan of the price.

Goodcook Nonstick 9″ Round:This nonstick pan performed similarly to the Amazon Basics pan cake released smoothly and baked in the suggested time. The Goodcook Pan produced slightly darker edges, but the texture of the cake was not over baked.

Chicago Metallic Nonstick 9″ Roundand Cuisinart Chef’s Classic Nonstick 9″ Round: These pans performed almost identically. In both, the cakes released immediately without any sticking. Neither suffered damage from the dishwasher or being scrubbed with a scouring pad, but both were scratched by steel wool. Additionally, the baked cakes in both pans shrunk back almost a full centimeter, indicating overcooking likely due to the pans’ dark color. This can be remedied by adjusting the baking time, so these pans are still worth purchasing, but did not make our top picks.

How To Line A Round Cake Pan With Parchment

When baking cakes, especially layered ones, my greatest fear is that the cakes wont come out of the pans easily even if Ive greased the living daylights out of them. The solution is simple: place a sheet of parchment paper on the bottom of the cake pan. The cake will easily slide out every time.

While you can buy parchment paper already pre-cut into rounds, theyre expensive and youd need to buy more than one type of round if you have cake pans in multiple sizes. Heres an easy way to make your own parchment rounds out of a regular roll of parchment paper in just a few quick steps!

Why This Is The Easiest Way

Youre probably wondering why you cant just plop the cake pan on parchment, trace a circle around it, and cut that out instead. Well, that will result in a round thats just a tiny bit too large for the inside of the pan, and youll have to trim it down some more. Its not the most efficient way.

This method, which is a bit like how you cut paper snowflakes out when you were child, just requires some simple folding and a quick trim with some scissors: rip off a piece of parchment just slightly larger than your cake pan, then fold it into a rough square and finally into a triangle. Take the tip of that triangle and place it on the center of your cake pan, then trim the excess parchment hanging over the edge off. Unfold the paper and presto! A round piece of parchment that will fit perfectly on the bottom of your pan.

Trust me, this really is the easiest way. Once you try this method, youll never even think about buying pre-cut parchment rounds again and your cakes will always come out of their pans like a dream.

Tear off a sheet of parchment.
