Easy banana bread can absolutely be made into muffins! Simply use my recipe above, then spoon 3 tablespoons of batter into each greased or lined muffin cup. Bake for 18-20 minutes.
There are several benefits of making banana bread into muffins. First, they cook faster! Muffins will only take 20 minutes to bake! You dont need to slice them, theyre easily portable, and theyre easy to freeze! I like to bake a batch of banana muffins and then freeze them in a layer in a large ziplock freezer bag. I pull them out one or two at a time for breakfast. You can let them thaw on the countertop, or you can microwave them or toast them to heat them up. Yum!

I have been making banana bread for a long time. With cream cheese, sour cream, baking soda, no baking soda, trying to find the perfect recipe. Yesterday, on my , a reader Patty, mentioned banana bread made from a yellow cake mix. Huh?
I started asking around and was shocked that my sister had such a recipe tucked away from a church event a while ago and never had the chance to make it. The rest is history.
I had a pile of melting bananas, and so I might have added a little more banana then called for, but that turned out to be ok. The recipe made 2 loaves and they lasted exactly 4 1/2 minutes after I took these pictures.

How Do I Ripen Bananas In The Oven
If you want to make cake mix banana bread but your bananas arent fully ripe, you can try ripening them in the oven. You can do this as long as your bananas are still in the peel and they are no longer green.
Heat your oven to 300°F and place the unpeeled bananas on a baking sheet. Cook them for approximately 15-20 minutes or until the bananas are black in color and shiny. Then theyll be ready to use in this recipe!
How Do I Make Sure My Banana Bread Is Moist
The key to ultra-moist banana bread is overripe bananas.
Im talking brown peel, mushy flesh, ripe bananas. Theyll be too soft to eat as-is, but theyre perfect for making banana bread.
As long as you use overripe bananas, the chances of getting dry banana bread are very slim.
However, youll want to keep these guidelines in mind, just to be sure:
- Use oil instead of butter. Many banana bread recipes will call for butter for richness and flavor, but I like to use oil in mine. Its the second secret ingredient to insanely moist bread.
Besides, the ripe bananas will already take care of the breads flavor, so theres really no need to worry about that.
- Store banana bread in an air-tight container or wrap it tightly with plastic wrap. This will help keep it moist for longer.
If your leftover banana bread still turns dry, just microwave it with a damp paper towel on top.
The water in the towel will produce steam during heating, which will put moisture back into the bread.

How Do You Know If Banana Bread Is Undercooked
Before you take your banana bread out of the oven, be sure to check to see if its cooked so you can avoid having to deal with an uncooked center in the load. You can use a toothpick, knife, or skewer to check.
Insert it into the center of the load and if it comes out clean or with just a crumb or two on it, your banana bread loaf should be completely cooked! Youre also looking for an internal temperature of about 200°F 205°F.

Easy Banana Bread Recipe
FOR THE BANANA BREAD
- Preheat oven to 350F.
- Combine over ripe bananas, eggs and bourbon extract in a large bowl and mash until slightly chunky yet mostly smooth. Whisk in the cake mix for about 2 minutes. The batter should be pretty smooth but with a little bit of chunkiness because of the bananas.
- Chop butter into tiny cubes and grease 2 loaf pans. Sprinkle each pan evenly with butter cubes, cinnamon and brown sugar. Pour in the banana bread mixture half way and bake for 40-45 minutes or until the bread is cooked through. Test by using a toothpick.
- Remove banana bread from the loaf pans immediately and let it cool for 10-15 minutes before smothering it with honey butter.
FOR THE SMOKED SALT HONEY BUTTER
- Mix together butter, tupelo honey and smoked sea salt the serve.

How To Make Easy Banana Bread
Heres how you make Banana Bread: First, preheat the oven to 350º F.
Then, lightly spray an 8 loaf pan with cooking spray. I like to use the non-stick spray made specifically for baked goods. It contains flour in addition to the oil, so breads and cakes dont stick to the pan. Set the pan aside.
In a mixer, stir all the ingredients for the bread, starting with the ripe bananas, then the oil and eggs, then the cake mix. You wont mix long- it takes only about 1 minute to get the batter ready!
Pour batter into your prepared pan. You can add fresh banana slices and a dust of cinnamon sugar. It looks gorgeous and adds even more banana flavor.
Bake for 50 minutes, until bread is golden and internal temperature registers 200º F. This is one of my favorite tricks for baking quick bread! If you test the internal temperature, you can be assured that the inside of your bread is sufficiently baked, which means it wont collapse as it cools!
Remove bread from oven and let cool in the pan before you take it out.
