Pineapple upside down cake in a Bundt pan

When it comes to cakes bundts are the ones that scare me the most. They are so unpredictable on if they will release from the pan that usually I have in the past stayed away from them.

But since Ive been feeling a little more confident and adventurous in my cake baking excursions I figured it was time to busy out another bundt and make this fun and summery Pineapple Upside Down Bundt Cake!

This cake is moist, dense and delicious. It has just the right amount of fruity and sweet that pairs together to create a fun and flavorful cake experiencewow Im calling tasting a cake an experience, what gas gotten into me?

Anyways this cake is super simple to whip up and is fun for a family gathering, picnic or just a cake to have around to munch on throughout the daybecause we all know thats whats we do.at least its what this gal does. No shame.

Ive always been a fan of this cake and taking a twist on the traditional and making it a Pineapple Upside Down Bundt Cake is a fun spin that the whole family will love.

I think that the addition of the butter and brown sugar that goes in the bottom of the pan makes it come out just that much easier when paired with my trusty shortening/flour combo I always use. I swear by the combo and it hasnt failed me yet, and trust me when I say Ive had quite the experience of trial and error.

How Do You Make A Pineapple Pecan Cake

  • Preheat oven to 350 degrees F . Grease and flour a 9×13 inch pan.

  • Bake in the preheated oven for 35 minutes, or until a toothpick inserted into the center of the cake comes out clean.
  • The History Of Pineapple Upside Down Cake

As I pondered the recipe for this cake, I got to thinking about the idea of flipping a cake upside-down with fruit making its way to the top. Who came up with this idea, anyway? According to food historian Gil Marks, the original idea came from a variety of historic baked goods, including skillet cakes. Not everyone had an oven 100 years ago. So, baked goods like cornbread, shortcakes, and so on were baked in a skillet and then flipped.

It became trendy to put fruit on the bottom of the cake before baking. The French tarte tatin, for instance, was an apple tart flipped upside down. It dates back to the early 20th century.

There were a host of other upside-down treats available back then, as well, but the Pineapple Upside Down Cake is still causing party-goers to flip .

Can I Use Butter To Grease A Bundt Pan

We recommend greasing your bundt pan generously with spray oil or use a pastry brush to brush oil or melted shortening into every nook and cranny. The milk solids in butter can actually exacerbate sticking, especially with the more intricate details of bundt pans, so its not the best choice for this job.

After being in California last week for a wedding and to see family and friends, I came back missing the warm and sunny climate. Our friend was having a birthday this weekend and to celebrate we decided to bring the hot sun to us with a Hawaiian luau-themed, birthday, dinner party.

My grandmother on my dads side used to make this classic American dessert in the 50s and 60s and I have always thought it looked so pretty and fun. I know maybe its not traditional Hawaiian cuisine but, hey it has pineapples in it! I was in charge of all the food for the event so I made 3 kinds of kabobs, Asian-style meatballs, green salad, this beautiful cake, Rice Krispy treats , and figs stuffed with blue cheese and wrapped in prosciutto. Therefore, I didnt really have the time to make the recipe from scratch. This recipe was the perfect way to combine good-op American convenience and a little elbow grease.

The result was an absolutely stunning cake that was the center of attention at the party. I used two 8 rounds to make a double-decker birthday cake but you can just as easily keep it simple with a 9 x 13 baking pan. For the two rounds, just split the butter, sugar, pineapple, and cherries between the two pans. Simple as that! The cake was moist and you really could taste the pineapple juice flavor. The cherries on top were, well, just that! I hope youll step back into a little classic Americana with me and give this cake a try!

Smooth out the batter with a small icing spatula or butter knife, then lightly but firmly tap the pan on the counter a few times to remove air bubbles.

    Yellow Cake vs. White Cake.

    • A yellow cake is different than a white cake. A yellow cake mix tends to be bit sturdier than a white cake.

How To Make Sure Bundt Cakes Turn Out Perfectly

If you dont want your bundt cake to stick, its important to grease it properly before adding the batter to the pan. There are three things that weve found work for giving you a cake that releases perfectly, every time.

  • Cake Release. This is easy to mix up and is our favorite thing to use to grease a pan. It stores for months in the fridge, so you can have it ready for bundt cake pans and regular round cake pans, too.
  • Bakers Joy. If you dont want to make cake release from scratch, try this spray. It has flour in it so the cakes come out cleanly.
  • Shortening + Flour. Grease a pan with shortening, making sure to get in all of the crevices of an intricate cake pan. Then dust the pan with flour. Shortening is the key here, not butter or cooking spray.

Pineapple Upside Down Bundt Cake | Roti n Rice

For this recipe, begin by preheating the oven to 350 degrees and spray the Bundt pan with nonstick cooking spray VERY GENEROUSLY. We like to use the Bakers Joy that has flour added to it. It helps for easy removal afterwards.

Open your can of crushed pineapple and drain it into a bowl, make sure to save the juice from the crushed pineapple for later!

In a large bowl beat together the yellow cake mix, dry instant pudding, eggs, vegetable oil, and ¾ cup of the pineapple juice from the can with a hand mixer for 2 minutes.

Once that is done, add in the vanilla extract into the cake batter and continue to mix everything together.

After that is done, fold in the crushed pineapple to the cake batter and then pour the batter into the prepared Bundt pan.

Place it in the oven to bake for 40 to 42 minutes or until an inserted toothpick comes out clean.

    FILLING:

While the cake is baking, combine the ¼ cup pineapple juice from the drained pineapple, vanilla extract, powdered sugar, and melted butter in a small bowl until everything is well combined.

When the cake is done baking, remove the pan from the oven and place it on a wire rack to let the cake cool.

Immediately after placing the cake on the wire rack, take the skewer and poke the cake about 1/2 inch apart while the cake is still hot in the pan.

Let the cake cool down in the pan for about 40 minutes and then invert the cake onto a serving platter and then take the pan off and let the cake continue to cool completely.
