How To Make Rum Cake With Cake Mix
The cake is so ridiculously easy to make. Dump all the ingredients in a bowl at once, mix, bake. After baking, poke holes with a fork over the top of the cake while its still in the pan, add rum sauce, invert, and repeat with hole poking and sauce adding.
If the rum cake glaze crystallizes before you can drizzle it over the inverted cake, dont panic! Just give it a good stir and drizzle away.

Preheat oven to 325? F.
Lightly grease and flour a bundt pan. Sprinkle walnuts over the bottom of the pan.
Blend the dry cake mix, dry pudding mix, water, rum, oil and eggs for 2 minutes. Pour the batter over the walnuts in the pan and bake for 1 hour.
Prepare the Glaze 10 minutes before cake is finished baking.
Combine water rum, water sugar and butter in to sauce pan. Heat over medium heat, stirring until boiling. Boil for 2 minutes stiring occasionally.
Remove cake from oven. While in pan, gently stab cake with sharp knife.
Slowly pour sauce over cake
Let the cake cool in the pan for 30 minutes before removing from pan.

About The Fruit Mixture
We use a mixture of prunes, currants, raisins, and glaced or maraschino cherries. I think most dried fruit would work well in this cake. One year we even tried dried figs, but we ended up chewing the seeds throughout the cake. Needless to say we omitted it the following year. My dad usually grinds the fruit for us, he prefers to use a traditional food mill even though there are faster ways. I use a ninja blender. It has the grinding power to get the fruits to a smooth paste texture and it gets it done quickly.
We grind our fruits then soak with rum and wine. An alternative method is to soak the fruits whole and grind when ready to bake the cake. Avid black cake makers will swear by soaking the fruits for at least a year, while 3-4 months is good enough for others. No method is wrong here just different, and based on preference.
If you did not soak fruits months ahead, you can also simmer the fruits in wine for about 20 minutes. Let it cool then macerate and combine with rum.
You see that colorful stuff in the mixture? Thats mixed peel. I do not like the taste or texture of this in fruit cake, but when it is macerated with the other fruits, it really adds a nice flavor to the cake.
Pay close attention to how the fruit mixture is like a paste not watery or lumpy. I used my Ninja blender to macerate the fruits.

How To Make Rum Cake:
MixWet Ingredients: Whisk milk, sour cream, and rum together in a liquid measuring cup and let come to room temperature.
Cream butter and sugar: Whip butter then add granulated sugar. Mix in vanilla then add eggs and egg yolks, one at a time, mixing just until combined.
Combine Dry Ingredients: Stir cake flour, baking powder, baking soda and salt.
Alternate adding milk and flour mixtures to batter. Add & frac13 of the dry ingredients to the batter and mix just until combined. Add ½ of the milk/sour cream mixture and mix. Repeat until dry ingredients and milk/sour cream mixture are incorporated.
Bake: Grease and flour Bundt pan. I use shortening, and make sure every crevice of the pan is coated! Pour batter evenly into the pan and bake at 350 degrees F for about 50 minutes or until a toothpick inserted in the center comes out clean, or with few crumbs.
Make Glaze: While cake is baking, make the glaze sauce. Add sauce ingredients to a saucepan over medium heat. Stir well until butter has melted and mixture is smooth. Bring mixture to a boil, stirring, and boil for 2 minutes.
Add Glaze: Cool cake in pan for at least 15 minutes before gently inverting it. . Then wipe the pan clean and put the cake back in it. Poke holes all over the cake and gently pour most of the glaze over the cake, reserving just a little.
Serve: Allow cake to soak up glaze and then invert it onto a plate or serving platter. Spoon remaining glaze on top.

Tips For The Best Rum Cake
The cake base uses yellow cake mix and instant vanilla pudding mix. If you dont have them in your area, there are plenty of other recipes out there for truly scratch rum cakes. I actually love yellow cake mix and for me this is a blessing rather than a curse that this cake starts off with a shortcut.
When making the glaze, use caution! Focus and take small children out of the kitchen because the mixture is insanely hot and flammable and youre going to be whisking the entire time.
Allow cake to rest for about 1 to 2 hours to absorb sauce before slicing and serving. The flavors marry as time passes and I find this cake tastes better as time passes.
