Some of you may find this to be difficult if you need to adhere to a strict dairy-free diet regimen. This handmade brownie recipe, on the other hand, does not include any dairy at all hurray! Heres everything youll need to put it together: All-purpose flour, unsweetened cocoa powder, salt, dairy-free chocolate chips or chocolate chunks
- olive oil
- granulated sugar
- eggs
- vanilla extract
Once youve acquired your ingredients, all you have to do is combine the oil, sugar, eggs, and vanilla extract. When everything is incorporated, add in the flour and cocoa powder, and stir until everything is just blended. Youre almost ready to bake these bad boys once youve folded in your chocolate chips.

- Nestle Simply Delicious Semi-Sweet Chocolate Chips These are also a wonderful alternative because they are free of all eight of the most common allergies.

A Somewhat Healthy Carrot Cake Recipe
Carrot cake is already on the healthy end of the spectrum as far as cakes are concerned. In fact, carrot cake became popular in the US during the 1960s when oil was thought to be healthier than butter. Grated carrots add fiber, moisture, and sweetness, meaning that less sugar is needed. Many carrot cake recipes use whole wheat flour, and some add in hearty mix-ins such as raisins, nuts, pineapple, and/or coconut.
My carrot cake recipe straddles the line between healthy and not. On the healthy side, we have half a pound of grated carrots, a relatively small amount of sugar as far as cakes go , and over 50% whole grain flour . Walnuts and sunflower oil add healthy fats, and 3 eggs add protein. You could bake these in muffin cups and serve them with dairy-free yogurt for breakfast if you like.
Choose The Right Cocoa Powder

Because this gluten-free chocolate pudding cake doesnt use baking soda, already has an acidic ingredient , and uses a high amount of cocoa powder, I would use Dutch-processed cocoa powder for this recipe. Natural cocoa powder will produce a more bitter result. Dutch-processed has already been neutralized, so it will produce a sweeter, more seamless chocolate flavor.

Baking Powder Vs Baking Soda
Ive had a number of comments asking me questions about baking soda and baking powder.
Ive also noticed that if the wrong one is used, things dont come out as they should.
Using baking soda instead of baking powder can give your recipe a terrible metallic taste, while using baking powder instead of baking soda leaves your baked goods looking flat.

You can do so in two ways . Basically youre just trying to layer the cake and ice cream in as uniform fashion as possible. I went with a loaf pan for easy sculpting, but you could also use a cake stand and just frost the cake with the ice cream like frosting. If you do this, youre fancy and Im jealous of your skills.

There are a number of benefits to sifting flour and other ingredients like cocoa ingredients:
It removes any unwanted debris and you can get a more accurate measurement than when packed tightly in a bag.

If you sift the powdered ingredients together, it helps combine them and mix more evenly with other dry ingredients like sugar.

Assembling A Homemade Ice Cream Cake
And now for the best part: assembling the vegan ice cream cake! The key to making an ice cream cake is working in a cool environment. So as long as your kitchen is cool, youll be good to go!
Youll assemble this cake in stages. Again, the full instructions are in the recipe card, but were going to go over some tips here, as well as provide some visual references. We also have a video tutorial, so be sure to check that out below!
Like we discussed above, slicing the ice cream into the perfect sized layers is the key to making even and non melty ice cream layers. Youll stack the cake up as cake layer, ice cream layer, cake layer, ice cream layer, and finally cake layer.
I also recommend using a dowel for this cake as well. This will help ensure that your cake stays standing as youre transferring it to the freezer and back. Here is a great article on how to dowel a cake if you havent before. Dont worry! Its super easy!
Once youve stacked the cake, youll place the ice cream cake back into the freezer and allow it to set for at least 45 minutes. This will ensure that the ice cream has hardened once again, and will keep the cake from melting. If youre worried about drying out the cake, dont worry- 45 minutes to even an hour will still be fine for your cake, and it will be super moist! If youre concerned with drying out the cake though, you can use a simple syrup drizzled on the tops of the cakes before stacking them.

How To Measure Flour And Other Dry Ingredients
Using a dry measuring cup, scoop ingredients from the bag or spoon them into the cup.
Next, level off the ingredient by removing the excess with an upside-down butter knife.
The one exception to this is brown sugar. Brown sugar should be packed down and then any excess should be scraped off as well.
