  • 1 box of instant chocolate cake mix
  • 2 cups of heavy cold whipped cream
  • 1/4 cup of powdered sugar
  • 1 sachet of strawberry jello powder

Do your strawberry whipped cream frosting, as discussed above. Bake your instant cake mix as instructed in the box. Set the cupcakes to cool once done.     Italian buttercream also relies on egg whites, but it comes together a bit differently. In this case a hot sugar syrup is slowly added to the egg whites while theyre being whipped. Once cool, butter is added in much the same way as in the Swiss buttercream. While almost indistinguishable from Swiss buttercream, the Italian version is slightly lighter. Its also excellent for piping and holds up quite well over time. Heres the method:

  • In a medium saucepan, combine ¾ cup granulated sugar with ¼ cup water and ¼ teaspoon salt. Bring to a boil, swirling occasionally, but not stirring. Cook until mixture has reached 230°F on an instant-read or candy thermometer.
  • Meanwhile, using an electric mixer whip 5 egg whites with ¼ teaspoon cream of tartar until medium peaks form.
  • With the mixer running on medium-low speed, slowly pour the hot sugar syrup into the whipped egg whites. Once all the syrup has been added, turn the mixer to medium-high speed and whip until the bowl is cool to the touch.
  • Add 1½ teaspoons vanilla extract or other flavorings and whip to combine.
  • Add 4 sticks butter, 1 tablespoon at a time. Again, if it starts to look curdled, keep going: It will eventually come back together.
  • This will make enough frosting to fill and ice an eight-inch two- or three-layer cake.

    This frosting recipe makes about 5 cups, enough for an eight- or nine-inch inch three-layer cake, with some extra for decorations.

    Royal icing can look fabulous, even if you spread it casually. If you want a crisp, smooth finish you need to apply the marzipan carefully. You dont have to use a lot of icing and its less sweet than fondant.

    Its important to get the texture correct when mixing the icing, otherwise it can set so hard youll struggle to cut the cake, or slide off because its too soft. Adding 12 teaspoons of glycerine will prevent the icing setting hard enough to break your teeth, though it will still form a robust crust when left to dry overnight.

    To cover a cake, mix the icing until it holds stiff peaks. For piping, you want it a little thinner so it flows through the nozzle.

    Its best to cover the cake with marzipan first so you dont get crumbs in the icing. Royal icing is more likely than fondant to absorb colour from the cake, so if you dont want marzipan go for a thicker layer of icing to ensure any discolouration doesnt show through and dont ice too far ahead. You can use a layer of fondant icing instead of marzipan if you wish.

    Fondant icing gives a super-smooth finish loved by cake decorators. Getting a perfect result requires patience and skill, but if you dont mind a few imperfections its easy to achieve a great-looking cake and a thick ribbon covers a multitude of sins!
