Replacing Sugar In Baking: Sweeteners
Sugar can be replaced with sweeteners. Artificial sweeteners , also called intense or low calorie sweeteners such as those containing sacchari, aspartame or sucralose, have a sweeter flavour than sugar and so fewer grams of sweetener may be needed to replace the grams of sugar.
Check instructions on the sweetener or its accompanying website for more details of how best to use it in baking.
Safety note : If you have phenylketonuria you should not consume products containing aspartame.
Sugar alcohols, also known as polyols, such as:
have less of an effect on blood sugar levels than sugar but can have a laxative effect and are best consumed in smaller quantities.
Tips And Serving Suggestions
- Storage: store in an airtight container or on a plate covered in plastic wrap in the refrigerator up to 5 days.
- Other ingredients: use other berries like raspberries or blackberries instead of strawberries while still keeping it low carb.
- Serving: this cake is goes well with a low carb sugar free ice cream, whipped cream or simply a warm beverage like coffee or tea.
- Baking: if you notice the middle of the cake is uncooked, this is due to oven temperatures being higher than suggested. Try lowering the temp in the oven to 250 and bake for another 10-15 minutes.
Baking With Diabetes And Coeliac Disease
If you have coeliac disease, you can still enjoy baked treats. Theres a good range of gluten-free flours and other alternatives available in large supermarkets or health food shops. Youre no doubt aware that youll need to be very careful to read the label on baking products.
You can buy self-raising, gluten-free flour specifically designed for cakes. Use this in place of wheat flour in your recipes, but youll need to add a little more liquid, such as skimmed milk or water, or it will be too dry. Refer to the packaging on the product for more information.

Sugar Free Chocolate Sponge
Add all ingredients to blender and blend until smooth. You may need to scrape the sides a couple of times and blitz again.
Tip: By adding the wet ingredients FIRST and the dry ingredients SECOND, you avoid the flours sticking to the bottom.

Fill the batter into two generously greased non stick baking tins .
You can also line the sides with baking paper if you worry about the batter sticking!
Bake for about 35 minutes or until you can insert and remove a skewer without any crumbs sticking.
Do not over-bake as the sponge will firm up as it cools.
How To Make Keto Spice Cake
The majority of this recipe is simply mixing together the ingredients. Prep only takes about 25 minutes!
Step 1: Line an 8×8 inch baking tin with parchment paper and grease the sides with melted butter. Preheat your oven to 350°F .
Step 2: In a medium mixing bowl, whisk together all the dry ingredients until well combined. Set aside.
Step 3: In a large mixing bowl, add the butter, cream cheese, and granulated stevia. Cream using a hand mixer for 2-3 minutes until creamy, smooth, and slightly fluffy.
Step 4: Add the eggs, vanilla, and almond extract if using.
Step 5: Beat on low to mix the ingredients together, then mix on high for 5 minutes to combine well.
Step 6: Add the dry ingredients and beat on low until just combined. Then, beat on high for 3 minutes, scraping down the sides of the bowl as necessary, until the mixture is completely incorporated.
Step 7: Pour the mixture into your prepared baking tin.
Step 8: Bake for 40 45 minutes until a toothpick inserted in the center of the cake comes out clean. Remove from the oven and allow to cool in the tin for 15 minutes, then remove from the baking tin.
Step 9: Allow the cake to cool completely before placing it in the refrigerator to chill before frosting.
Step 10: While the cake is in the refrigerator, cream the butter and cream cheese together until smooth. Add the vanilla and powdered stevia.
Step 11: Beat on low until combined, then on high for 5 minutes until fluffy. Place in the refrigerator to firm up.

Layers In Sex In A Pan Dessert
Traditionally, sex in a pan dessert contains six layers. These include:
- Pecan shortbread crust
- Whipped cream
- Shaved chocolate
All the versions that I know of are made with sugar and wheat flour. In fact, a couple of the layers usually include instant pudding. For me, these would be no, no, and definitely not.
I knew there was a way to make it better and low carb without sacrificing the sinfully delicious taste and texture.

For A Vegan Keto Cake
While flourless chocolate cake recipes usually call for eggs, making a vegan version was surprisingly easy. I simply mixed three tbsp Bobs egg replacer with 150g water , let it sit for a few minutes to thicken, and then used that as my three eggs in the recipe.
If you need six eggs for a double layer cake, just use six tablespoons of the egg replacer mixed with 1 1/4 cup water instead. I havent tried making a version using flax egg yet, but be sure to report back if you experiment!
Can You Use Regular Sugar
Yes, if youre not counting carbs, the cake recipe works just fine with regular granulated sugar as well. I know this because I tested it on myself .
Even if you use real sugar, you still only need 2/3 cup total for an entire double layer cake, which is crazy low in comparison to traditional chocolate cake recipes that often have at least double that amount!

How To Replace Sugar In Baking
You can use artificial sweeteners in baking, but you may need to adapt some recipes. Sweeteners are easy to use in things like pie fillings, particularly for sweetening tart fruits such as cooking apples, rhubarb or gooseberries.

In this recipe, I used an 8-inch loaf pan. There are other options if you would like a different look. Cornbread molds, can come in triangular slices, corn sticks and corn dog sticks. For originally cornbread or cornsticks, use the cast iron cornstick molds. these give you individual portions and are equal in size. Remember to adjust the nutritional values when using other pans or molds.

This keto sponge cake is a simple but super tasty sugar-free vanilla cake that is also gluten-free and diabetes-friendly.
Because it is made with low-carb flour and no all-purpose flour, it comes with very few carbs: only 3 g of net carbs per slice!
How To Make The Low Carb Strawberry Pound Cake
STEP 1: Using a stand mixer or a large bowl with a hand mixer, cream together the erythritol and butter.
STEP 2: add the cream cheese in chunks and mix until creamy
STEP 3: add the 6 eggs one at a time and then add the vanilla extract until combined
- STEP 4: stop the mixer and scrape down the sides to make sure everything is fully incorporated. Then slowly add the almond flour and baking powder with the mixer on low/medium speed, onced mixed through increase speed to high for 1 minute. Scrape down the sides once again and then mix on high speed for another minute. At this point you can add the optional coconut extract if you wish to use it.
STEP 5: Fold in the chopped strawberries and place batter in an 9″ well greased loaf pan. Bake at 350 °F for 60 minutes, turn the oven off and allow to sit in the oven for another 10 minutes. You will know it’s ready when you poke the cake with a toothpick and it comes out clean. Times may vary according to your oven.
STEP 6: for the glaze, using a whisk, mix the erythritol, coconut milk and vanilla in a medium bowl until mixed through.
STEP 7: once cake is done, remove from the oven and allow to cool completely before removing from the load pan. Otherwise it may fall apart. Then brush on two coats of the glaze and sprinkle the top with unsweetened shredded coconut.
