This cake does not need to be refrigerated. It is fine a room temperature for up to 4 days in an airtight container. That being said, this cake actually does taste a little better on the second day, when all the flavors have had a bit more time to combine. So its not a bad idea to make this the day before you are planning on serving it.
You can freeze this Bundt Cake. But Id do it before you put the icing on, Simply let it fully cool, wrap it in freezer wrap, put it in a freezer safe container and it will be good for up to 4 months. Thaw at room temperature.

- Leave the berries a little chunky: I found the raspberry batter worked best when the berries were still a little chunky. So, you want to only do a rough crush on those fresh berries. No worries though if you super pulverized them, you’ll still get a delicious batter. You just may have a slightly more dense raspberry layer.
- Take time with the layering: the mixing steps in this cake are pretty easy, so the only slightly tricky thing is the layering of the batters. First and foremost, know that the layering will not make or break this cake. If your white batter gets into your red, or your red into your white, you’ll still have a super delicious cake in the end. I first discovered Nothing Bundt Cakes while living in Las Vegas, but they now have locations all over the country. The cakes are moist, rich, beautifully decorated but theyre also quite pricey. So I decided to recreate some of my favorites at home. I cant play favorites, but the Chocolate Chocolate Chip Bundt has become one of the most requested birthday cakes in the family. Special Tools You’ll Need
The only special tools you need here are a mixer and of course a Bundt pan! A pastry brush is really helpful for prepping the pan too if you have one, but it’s not required.
With the baking dynamics of this particular recipe, I found I had the best results with a classic, not super complicated or detailed Bundt pan . A simpler pan allows the batters to stay in their proper layers, and leave you with a pretty, layered look once baked.

How Long Does It Take For A Cake To Cool
It takes about 2-3 hours for a cake to cool completely, but a bundt cake should only cool 5-10 minutes in the pan before removing it. If you coated your bundt pan with sugar before baking, it’s important to remove the cake within 15 minutes of removing it from the oven, or else the sugar may harden and act like glue preventing your cake from sliding out easily.
I recommend letting the bundt cake cool for at least one hour before glazing it with the white chocolate ganache. This prevents the ganache from melting off a warm cake. If you can let it cool for 2 hours, that’s even better.
How To Make This Recipe:
One: Youll be using a 10 cup bundt pan for this recipe. Ive found the best way to grease is it to take a pastry brush and some softened butter and grease the entire pan. The brush means you can easily get into all the nooks and crannies. You can also just use a baking spray if you have that on hand.
Two: In your stand mixer fitted with the paddle attachment, beat your butter, sugar and salt until light and fluffy. Beating the butter and sugar together for 2-3 minutes means your finished cake will be soft and fluffy instead of dense.
Three: Add your eggs one at a time. After each egg has been added, beat on medium-high speed for a minute. Also take care to scrape the sides of the bowl down. Add your vanilla and whip together until combined.
Four: Add the dry ingredients in three additions, alternating with the buttermilk. Make sure to start and end with the dry ingredients. The reason this is done is because we dont want to crush all of the air bubbles we just made creaming the butter and sugar together.
Five: Scoop out half a cup of the batter and mix with the raspberry jam in a medium bowl. Mix together until incorporated this is going to be your raspberry swirl.
Six: Fold in your white chocolate chips with the rest of the batter. Dont overmix as this will cause a tougher cake texture.
Seven: Pour half of your batter into your bundt pan. Use a small offset spatula to make it even.
