To Make Birthday Cake Truffles You Will Need:

I recreated the MILK BAR BIRTHDAY CAKE TRUFFLES (momofuku) Step by Step Tutorial Recipe
  • some leftover cake: for birthday cake truffles, use leftover sprinkle cake
  • a binder: for birthday cake truffles, I used milk flavoured with a little vanilla, but you could also use booze, or even lemon curd, passion fruit curd, or grapefruit curd, or even a fudge sauce
  • a coating or hard shell: for birthday cake truffles, I used white chocolate. I’ve also used dark chocolate or milk chocolate. The chocolate coating will seal the cake truffles and preserve them. Covering the truffles in melted chocolate also allows you to coat them in something crunchy
  • a crunchy coat: for birthday cake truffles, use leftover Milk Bar birthday cake crumbs or milk crumbs, but you could also toast leftover cake to make cake crumbs, or chopped toasted nuts, coconut, sprinkles, ground buttered popcorn brittle, ground homemade graham crackers, etc.

For the sprinkle cake and birthday cake crumbs, I used leftovers from making the Milk Bar birthday cake. This recipe is inspired by the carrot cake truffle recipe from the Milk Bar book available on I highly recommend ordering this book if you don’t have it yet!

Cooking From The Book: Cake Truffles

The whole Cake Pops craze pretty much passed me by with no interest on my part, but I think its accurate to say that Cake Truffles are Cake Pops without sticks. Or Cake Pops are Cake Truffles with sticks. I have no idea which ones the chicken and which ones the egg.

After making the Momofuku Milk Bar Chocolate Chip Layer Cake, I had a whole container of cake scraps left. The obvious use, of course, would be to simply go at em with a fork. But we were sort of busy with eating the actual cake. The Cake Truffles recipe from the same Momofuku Milk Bar cookbook by Christina Tosi makes great use of these weirdly shaped bits and pieces.

Before You Start

One great thing about this recipe is that youre simply making use of leftovers, so there really are no new ingredients needed. You can also use any kind of cake, combined with whatever frosting/cake-moistening ooze, chocolate and coating you like, making it the ultimate cabinet crap recipe. In addition to the scrap Chocolate Chip Layer Cake, the Cake Truffles I made used up leftover passion fruit purée and chocolate Crumb.

Assembling The Crumb Cakes

This portion of the recipe is the most labor intensive, messy, and time consuming. Anyone who has worked with melting chocolate will tell you that its a sticky process, but worth the results.

Once you have mixed the frosting together in a mixing bowl, form 30 crumb cakes. To get the correct shape, roll the batter into a small ball before gently pressing to flatten. The crumb cakes will be more if a cookie shape vs a cake ball. Now before you start coating, I would definitely recommend freezing the crumb cakes before assembly. This will prevent them from falling apart in the hot, melted chocolate.

You could also switch things up by making a chocolate version, if youre feeling brave. We have tried several of the flavors offered like Chocolate Chip, Strawberry Shortcake, and Chocolate Pretzel. The cool thing about this recipe is you can swap out any or all flavors and really switch things up!

While I have not tested this theory, I have sourced some chocolate recipes to swap out. For the cake crumb, check out this post from Love and Olive Oil. For the cake, I would suggest my tried and true favorite chocolate cake from Stella Parks. As for the frosting, I think that my Cream Cheese Frosting recipe featured in my Devils Food Oreo Cupcakes post is a great option.

The story behind Christinas now-famous Cake Truffles is amazing, but you first have to learn how she makes her cakes. Each cake layer is baked in a rectagular baking pan, and then circles of cake are cut from the pan. This process leaves cake scraps leftover, and she didnt want to waste perfectly good cake. Thus, she invented Cake Truffles.

Now so popular that she has to make extra pans of cake devoted just to Cake Truffles, these delicious creations are available in her restaurants by the single or multiple. I came home with 12, and my family devoured them by the next morning!

How Does It Taste

This isnt your average cake. If youve never tried the 6-inch Milk Bar Birthday Cake, you might think it wont be enough for celebrating with more than one or two other people. It looks kind of small, you might say to yourself. I could take this down faster than you can sing two rounds of Happy Birthday. But you would be mistaken.

With three spongy, rainbow sprinkle-infused yellow cake layers, each held together with thick, cream cheese-tinged vanilla frosting, then topped with more frosting and dotted with crunchy cake crumbs , its deceivingly dense, and easily serves 8 to 12 people.

Its also a smart, money-saving business move to take the leftover scraps that would have been thrown out and to turn them into something else that you can sell. If youre a Netflix junkie , youll know that the popular series Chefs Table recently added a new season dedicated to pastry. The first episode features Milk Bar founder, Christina Tosi, and explores her reimagining of desserts. With menu items like crack pie, corn cookies, and birthday cake truffles, this bakery is a step away from traditional American favourites.

Ive been a fan of milk bar for years. And while I had tried all the items mentioned above, Id always been curious about their peculiar birthday cake. Now you must understand: I am the biggest fan of cake. I mean I am Lily Muffins after all.

So one fateful day, with my curiosity swirling inside of me, I took the plunge and shelled out a weeks worth of lunch money on this infamous dessert, or in my case, dinner.

For my fellow Torontonians, Milk Bar has a location downtown within the Shangri La hotel near University and Queen. Though its hidden on the second floor within the momofuku restaurant, its stocked full of popular goodies.

I headed upstairs, picked up a cake and made my way home at the end of a long work week.

In a very enthusiastic state of mind, I was looking forward to having cake for dinner on a Friday night. So here is my full review, coming from a cake-a-holic. Below Ive given my full honest opinion using a rating system I have devised for the sole purpose of this post.

How To Store And Freeze These Energy Balls

To store: these birthday cake energy balls will stay fresh in a sealed container in the fridge for up to 1 week.

To freeze: place the vegan energy balls in a sealed container for up to 6 months in the freezer. When youre ready to eat one, I recommend letting them soften up a bit at room temperature.

Milk Bar Birthday Truffle Crumb Cakes Reviewed

You dont usually find cookies or cakes the refrigerated section of the grocery store, though youll often find ready-to-bake cookie dough. Milk Bar Birthday Truffle Crumb Cakes stand out from the rest of the refrigerated products that surround them because they look like already baked cookies tucked in between the pudding cups and cookie dough packages. Milk Bar Birthday Truffle Crumb Cakes which come in Birthday Truffle Crumb and Chocolate Cakes are ready-to-eat treats from Christina Tosis Milk Bar line, inspired by her well-known confetti cakes.

The truffle cakes come in packages of two and are just a bit bigger than your average candy bar. There are two cakes in each package. The cakes seem to actually be more like cake pops than regular cake, very dense and with an almost cookie dough-like texture to them. Most cake pops are shaped into balls, put on sticks and served fresh. These are flattened into discs, dipped in a white confectioners coating and rolled in streusel and sprinkles, then packaged.

The truffle crumb cakes look cute and brightly colored, but theyre just not as satisfying to eat as a real birthday cake or even a cake pop. Theyre extremely sweet, and their dense texture means that they are both chewy and a bit dry. The streusel on top adds a bit of crunch for texture, but adds even more sweetness.

Healthy Ingredients In Birthday Cake Energy Balls

You might be wondering: how did I make an actually healthy version of one of Milk Bars best sellers? If youre new here, thats kind of my core motivation in life. But honestly, it took A LOT of batches to get these just right and plenty of internet research which led me to an epic discovery: that a teensy bit of almond extract almost exactly mimics that flavor of vanilla cake batter! Especially when you combine it with oat flour and an overdose of vanilla extract. Thus, the Birthday Cake Truffle Energy Ball was born! Heres whats inside:

  • Cashew butter: I opt for organic, unsalted creamy cashew butter for these energy balls.
  • Oat flour: gluten-free oat flour will keep these energy balls together and add plenty of fiber!
  • Coconut sugar: a great, refined-sugar free natural sweetener for these birthday cake energy balls.
  • Almond and vanilla extracts: as stated, the mixture of these natural extracts gives total vanilla birthday cake vibes.
  • Dairy-free milk: just a splash of unsweetened plant-based milk will give these energy bites perfect consistency.
  • Fine grain sea salt: this will help make the energy balls flavors pop!
  • Organic sprinkles: give your healthy energy bites big birthday cake energy with organic sprinkles

Making The Cake Crumb

This portion of the recipe is probably the easiest and my favorite! The Cake Crumb is what really sets this dessert apart, in my opinion. It adds texture to each bite and is extremely delicious. While this portion of the recipe is actually used at the end of the assembly, I encourage you to make it first so that it has time to fully cool before coating the crumb cakes.

The cake crumb is actually a smaller version of the cake recipe, minus a few ingredients. When finished, it almost tastes like a sugar cookie. The main difference between the cake crumb for this version of the recipe and the original, is that you will want less large chunks in the cake crumb. This will allow a more sand-like consistency in the cake crumb and it will adhere to the white chocolate much better during assembly.

Making the Cake

This is the part of the recipe where I have made some modifications from the original recipe to accommodate converting it to truffle crumb cakes. The first step was to reduce the size of the cake being made to half of what the original recipe calls for. Instead of making the cake a quarter sheet pan, we have reduced the cake to fit into an eighth sheet pan.

Dont have an eighth sheet pan? You could always double the cake to fit in your quarter sheet pan and use half. Or you could try using another cake pan with similar volume to an eighth sheet pan.

Do Milk Bar Truffles Need To Be Refrigerated

Homemade Milk Bar Birthday Truffle Crumb Cakes

Suitable for cooking chocolate milk bar sweets or cake truffles, they should all be kept in the freezer for up to a month, which requires refrigerator refrigeration. It is recommended that cakes be stored in the refrigerator for 5 days before being served and in the freezer for up to 2 weeks afterward .

You dont need a colorful headband or a denim apron to make Milk Bar magic in your own kitchen, though if you want to go full Christina Tosi, her uniform couldnt hurt. All youll need, as it turns out, are a few baking essentials, some sprinkles and patience.

The lauded Milk Bar founder and James Beard Award-winning pastry chef just shared some of her most iconic recipes, which means we too can whip up layer cakes and cereal milk for every occasionand though birthdays come but once a year, Tosis famed birthday cake truffles are so good we could eat them nonstop .

Milk Bar makes these rolled, colorful morsels with the scraps left over from the bakery chains layer cakes, but if youre not attempting one of those towering beauties, you can still whip up the truffles in your own kitchen by following this guide. Not feeling Tosi-levels of enthusiasm? Thats OK, too: As it turns out, you can make these cake truffles using a boxed cake mix straight off a grocery shelf when you dont feel like baking your own.

  • Heat oven to 350.
  • Combine the butter, shortening and sugars in the bowl of a stand mixer fitted with the paddle attachment and cream together on medium-high for 2 to 3 minutes.
  • Scrape down the sides of the bowl, add the eggs and mix on medium-high for another 2 to 3 minutes, then scrape down the sides of the bowl once more.

    How To Put It All Together

    • First, crush the oreos and sprinkles as finely as you can. I either put them in a Ziploc bag and roll over them with a rolling pin or pulse them in a food processor. Whatever is easiest for you!

    Tip: If you are using the Ziploc bag method, smack the cookies with your rolling pin a few times first before rolling. It might feel a bit ~aggressive~ but itll jump start the crushing process and save you so much time.

    • In a large bowl, combine the almond flour, maple syrup, almond milk, vanilla, almond extract, and salt. Mix well. Add in the oreos and crushed sprinkles and mix until you form a sticky dough.

    Tip: As soon as the dough starts to come together, you might need to switch to mixing with your hands to help get the dough fully saturated and combined.

    • To make the topping put the oats and sprinkles in a blender or food processor and pulse until you have a fine powder. Place the powder in a small dish or bowl.
    • Roll the dough into ten equal sized mini balls, about 2 tbsp each. Toss each ball in the oat mixture until they are fully coated.
    • Serve whenever!
